Do you season or marinate your meat before cooking it? And how long do you leave it to absorb the ingridients?

I like to marinate my meat or chicken overnight in the fridge. Like the honey chicken I made to eat with coconut rice. I add in shallots, ginger, garlic, honey, salt, pepper and lemongrass onto the chicken. Cover with aluminum foil and it'll rest in the fridge for overnight. When I fry the chicken the next day, the chicken will absorb the marinate sauce. The meat will become soft and tender. I sometime season the meat. But I think whether you season or marinate will depends on the recipes or the way you like to cook.

It usually tastes better when you marinate the meat before cooking!!!. Sometimes its better when you let it marinate for a long time because the meat grab the sesoning better. It also depends on what kind of meat you are going to cook!!!!. If its a soft meat its not that necesary to marinate for a long time but it is hard meat like cow heart i think its better if you marinate it overnight and with a lot of sesoning.

I usually marinate all meat over night.

Not very often. Marinated meat is great though. I just always forget to do it and ideally you want to leave meat to marinate in the fridge overnight.

So do you cook meat without marinating it? I can't do that. If it is not marinated I can't eat it.

Depending on the type of meat that I am cooking, I may or may not marinate it. Sreak is a favorite meat to be marinated. Especially in a teriyaki style marinade. It makes even the worst cut so tender and full of flavor.

It depends on what I am making. I love to marinate chicken in Italian Dressing for a couple of hours before grilling it. Sometimes I will start marinating it the night before (that's on my organzed days that come seldom!) and I always marinate steaks if I'm going to grill them because it helps keep them moist. I would say that a couple of hours would be sufficient for most recipes. But if you have time to prepare give it a little longer.

Well I marinate all meats the night before with freshly picked seasonings such as onions and garlic with some salt and pepper. I think I will try your way. I'll let you know how it comes out.
