We're not into Halloween much in our house, but last year at the school, for smaller kids, instead of pumpkins, they used red peppers - which they cut with scissors.
Also they used the innards of some of the pumpkins and hid sweets in it (with wrappers on). The children had to put the hands in there and find a sweet - they did this in a room with no lights on - just a torch!
Like the above poster though, there is loads on the internet.

We are going to carve pumpkins in our home too, but this week we did some fun preschool craft projects. My daughter is 4 ½ and we have been doing craft projects for years. It is a lot of fun. I am not sure how old your children are, but this is what we did this week:
In addition to the larger size pumpkins they have, we bought at few small ones for $1. We have kids paint here and painted them with it. One my daughter painted a face on and the other she painted the whole pumpkin. That was a lot of fun.
Since the leaves are falling here, we went on a leaf hunting adventure. That in itself was a lot of fun. My daughter has a hard Dora Backpack toy and she used that to store her leaves. I took a large freezer bag and picked up some extra leaves.
We made leaf people. Just glue a leaf in the middle of the page and have your child draw arms and legs on them. We also have those eye things. I don’t know what they are called, but the eye part is inside a small plastic bubble and it can move around. They are available for sale in most craft stores. We put those on the leaves and drew the rest of the faces. We also drew sceneries in the background, like the sun, clouds, grass, and trees.
Two other projects we did with the leaves were paint them. I put some paint on a paper plate and my daughter used a leaf as a paint brush. Next, we glued a bunch of different sized and shaped leaves to a piece of paper and then painted those.
