Yesterday I remembered that I have kept the ready made muffin flour in my cabinet for almost a month. I opened the pack and the instruction said only add 3 eggs, 1/2 cup of cooking oil and water to thin the batter. Then stir using a spoon and it is ready to be baked. I tried it and put the batter into muffin cups. The muffin turned out to be gorgeous and my husband really likes it because it is so soft and moist and the taste is delicious.
However I don't know how to prepare a muffin from scratch.
Do any of you know the easiest and simplest way to prepare a muffin?
Thanks.

I don't know how much you paid for your "Muffin Mix",but plain flour, eggs, caster sugar and oil is about all you need to make some from scratch! Just a a pinch of salt,a little baking soda and baking powder, and whatever fruits, choc chips,or whatever you want to customise it..I mix in cornmeal to make corn muffins. Maybe there's dried milk in that Mix when you only have to add water?..I use fresh milk in mine! You just need to mix the ingredients-no need to beat it til smooth..good luck making your own!

I spend RM2.90 for the flour, RM1.00 for three eggs and some oil and water. I don't have to add sugar to it since it is already there. It is a blueberry muffin mix. Thanks for letting me know the ingredients. Oh.. there is milk in muffins? And there's no need for beating also? This is easy. Thanks again!

The recipe I found recommends mixing the dry ingredients in one bowl, the wet ones in another, then pouring the wet ones into the dry and mixing..Thanks for best response!

I read on one of your comments to some-one you liked choc-chip muffins
Here is the we like and it was a way of getting my so to eat banana.
Pre-heat oven 190c
mash one large ripe banana, add one cup milk one lightly beaten egg,
quarter cup melted margarine or butter, mix with a wooden spoon.
Sift in one and a half cups self-raising flour and a half cup caster-sugar add three quarter cup choc-chips ,stir only until ingredients are combined.
Makes twelve. Bake 15 to 20 minutes Serve warm or cold. Enjoy...
