I don't really know much about diamonds, besides princess cut, and vs1 clarity. I know she likes white gold, and the bigger the diamond the better.(lol)I have around $2-3k to spend, what can I get for that?
Some advice in the right direction would be greatly appreciated!

Keep a few factors in mind - how big are her hands (make a huge difference in gem size)? Do you want other gems in the setting? I have small hands (ring size 5) and got a .36 carat and it looks huge (most people think it is at least .50)
Also, you forgot about color. Top color is D,E, or F.
You can probably get a .59 D VS1 princess cut in a setting for just under 2k, but then you have to choose the setting.
FYI if you can get VVS1 or VVS2, VS1 is a lower clarity. VVS1 & VVS2 is 3rd & 4th from the top.
Shop online before going to any store (diamond.com has very competitve pricing). Jared, Adlers, Kay, Zales (really bad diamonds don't go there!), etc. and other stores tend to mark up their diamonds quite a bit. Try to find a jewler that will custom make the ring and has their own diamond dealer. With no middle man you can get something big with little cost.
Buy a bridal set if you can. It is a pain to find a wedding band later on.

I suggest you find a good jewlery store. If there is a Jared's near you they are very knowledgable and friendly. If you are looking for something more unique then ask your friends for a private jewler they trust. You can design your own ring at Jared's but it costs more.
