Coconut Bread

I am from the West Indies (Barbados to be exact) and was wondering if anyone out there ever tried Coconut Bread. Instead of making it in a loaf pan I make mine in muffin tins and it is a great tea time/coffee treat. I also prefer to use the fresh coconut rather than the shredded coconut we ger here - it gives it a much better flavour. The other thing is I don't knead it as much as they do back home - I just prefer to mix it and put in the muffin tins/loaf pan which gives it a ligter taste. Has anyone ever had it. It is quite simple to make just some basic ingredients the usual flour, sugar, baking powder, salt, vanilla and almond essence, egg and the most important ingredient grated fresh coconut.

The fresh coconut makes it very moist. therefore it will have a longer shelf life.I will look up my recipe tonight but I am not sure if it is the same one that Bajangel uses.
I have a fantastic red peas soup recipe whereby coconut milk is added at the end.I am unable to do it today as have medicazl appointments later today and I have to clear my desk, but promise to do it tomorrow. I think that your husband will enjoy it too.

Hi Bajangal,
We are waiting for the recipe! Where I live we call it toto. Is it the same recipe as for toto? Would love to hear from you on this.

I am not a big fan of coconut. But it sounds like something my hubby would enjoy. And he likes muffins. So that would fit perfectly for a breakfast treat.
