In Need of Recipes for Healthy Cheap Meals

I have a family of three adults, two children and one newborn. We are going through some financial difficulties and I am trying to compile a menu of the most cheapest but healthiest meals for my family. My goal is to follow a rotating 2 week menu to start with and to match my weekly spending on groceries. I also want to add a little green or fruit to each meal. So far I have a pretty good idea what to do for breakfast. I am mainly looking for dinner recipes. I think the left overs could be eaten at lunch time so I am not sure where I go with a lunch menu just yet. I love cheesy things, potatoes, rice and beans and pasta. I love spicey but my kids do not. We don't really like any fish but an occassional tuna casserole won't hurt. Would you mind sharing a recipe with me that you feel is cheap and healthy? I thank yo you so much! hi, we are living on one paycheck currently (i am waiting for disibility benefits to kick in) but we have a lot of soup during the winter. soups are great because you can throw anything and everything into a soup and the internet offers some great recipes. we also have a breadmaker that we got for free from some friends and we make bread to go with it and it makes a great meal! we also eat a fair amount of pasta as well.

i like to cook pasta and then leave it to cool. once it has cooled i add tuna, mayo and sweetcorn. this is really healthy and really cheap too. it also tastes fantastic! i take this into work a lot. also what ever is not eaten can be stored in the fridge. good luck and hope things improve for you. happy mylotting

Have you tried potato wedges? I think you have but let me give you my version of wedges. The wedges can be eaten with white rice which is quite cheap. Two cups of white rice is enough for the whole of your family members, because rice expands double its size when boiled. That's why when boiling rice we should put the same amount of water and rice into the pot to get a nice textured rice. I am giving you a recipe for two persons because I only live with my husband, and you can double up from this amount. Here it goes. Ingredients: 4 potatoes, wash clean and slice into wedges shapes. Do not peel off the skin. some salt and seasonings to taste (I use Ajinomoto) some pepper if you like A sprinkle of wheat flour to make it crunchy A sprinkle of turmeric powder Method: Mix all the ingredients in a bowl and deep fry. That's all. It's easy and delicious, and healthy. Eat while it is hot and you may want to add some more!

i cook in a crock pot sometimes,you can get a cheap peice of meat for say 6 bucks bet a bag of potato's carrots onions celery etc let it cook all day and according how big the pot you can eat pot roast for a few days or freeze some,but put the onions in last otherwise they discintagrate 20 nminutes before its done or your ready to eat.dont skin the potatos ,the skin has all sorts of vitamins in it ,i use the little red spuds. Here is a website you can take a look which is filled with recipe. startcooking.com I know the dishes are very simple but you can be creative and spice it up. What would be useful are dishes that can be kept for a long time. My grandmother makes soup and she freezes it if nobody wants it for the moment. It avoids waste of food and can be eaten later. For this matter of fact. My family eats up alot of rice. So a bag of rice which is about 18kilos are about 40$ but they last long. I mean it takes us about 6 months or so before we empty it. On top of this we eat it daily. So you'll just have to make some side dishes. the rice is easy to be stored if leftovers. SImply put what is left in fridge covered and put in the microwave when need it. Also meat should be easy. Prepare them in advance like putting up the spices and stuff. and she let them sit there for a day in fridge of course. Then you cook it up in the oven. My family rarely deep dry meat. So I suggest you to buy a smaller conventional oven if your main one uses up alot of energy like mine. You can also use some salad vinegrette dressing to to seasoned your meat (not the creamy one...) You can make large quantities of food but that you can store them up. This could be like pasta. It's better to do your own sauce then buying it. It tastes better and of course you can make it more healthy. My mom likes vegetables. So she would buy tomato can puree or sauce which is usually 99cents and u add mushrooms, celeries, onions, garlic, ground beef, etc. Forget the parmesan. I think it's expansive and of course to much fat. You can store the sauce in the refrigerator and 2 weeks later, it's still perfect. If you have any fruits that are left and your kids are picky, take various fruits and make it into a fruit salad. It's much more enjoyable then eating just 1 plain fruit. I hope this is helpful

You can try making up your own version of shepard's pie? Shepard's pies were originally thought up, for farmers and rural folk who didn't have time for elaborate meals and needed a flexible recipe for whatever they had on hand. The basic structure for a shepard's pie is: Some sort of meat some sort of vegetable mashed potatos witht the option of gravy. I usually make mine with ground turkey (which I brown in a skillet then layer at the bottom of the pan. Then I put a can of creamed corn over the ground turkey, then I cook up some carrots...put those on top of the creamed corn, drizzle honey and a pat of melted butter over the carrots, cook up some potatos and mash 'em...put those over the carrots, then put over the gravy...place in the oven til warm...voila. What I make usually equals four large helpings, but I'm sure you could adapt it for five people (newborns don't usually eat solids, so...) You could also try pot roast (which is usually some sort of beef cooked in a slow cooker for a few hours with carrots and potatos). Cabbage rolls are usually pretty cheap and one head of cabbage usually makes way too much for my family to eat, lol.

anjelskisses, Not trying to go against your wishes here, but let me encourage you to go for fish as it is very nutritional and healthy. I have been having rave reviews of this 2 recipes and from some people who does not like fish as well. To make your fish tasty it is always about cooking it right. Fish with Tomatoes Ingredients: * 300g Snapper Fillet or white fish * 1 medium Onion, diced * 400g Canned Diced Tomatoes * 1 teaspoon Sugar * Salt to taste * 20ml Water * 1/2 tablespoon Cooking Oil How to do it: 1. Heat oil in wok. 2. Add in the onion and saute till soften. 3. Add in all ingredients excluding fish and salt. 4. Bring to a boil. 5. Reduce to a simmer and add in the fish. 6. Cover the wok and continue simmering for 5 to 10 mins till fish is thoroughly cooked. 7. Add salt to taste. 8. Dish and serve. Strawberry Cod (Kids favorite) Ingredients: * 1 Cod, deboned * 20 strawberries, diced coarsely * 2 strand of spring Spring Onion, cut into 2 sections * 1 glove Garlic, diced or sliced * Flour for dusting * Oil of frying Marinade: * 1 teaspoon Sherry * 1 teaspoon Sesame Seed Oil * A pinch of Salt * 1 egg white Sauce (to be mixed together): * 4 tablespoon Chicken Broth * A pinch of Sugar * A pinch of Salt * 1/2 tablespoon Cornflour How to do it: 1. Marinate Cod with marinade for half an hour. 2. Heat wok with enough oil for pan frying. 3. Dust cod with flour and fry it. 4. Flip over after 3 minutes or when it turn slightly golden brown. 5. Continue frying till the other side has also turn golden brown and fully cooked. 6. Dish and drain from excess oil. 7. In a clean wok, heat 1 tablespoon of cooking oil. 8. Saute garlic and spring onion till fragrant but not brown. 9. Add in stock. 10. Simmer in low fire. 11. Gently stir it till it starts to thicken. 12. Add in the strawberries and continue cooking for another 15 seconds. 13. Pour the sauce over the earlier prepared cod. 14. Serve immediately. try this. It is yummy. 1/2 small sweet onion, such as Vidalia or Walla Walla, cut into thin rounds 12 ounces lean ground beef 1/2 cup dried cherries, finely chopped 1/2 cup coarse dry whole-wheat breadcrumbs (see Note) 1 clove garlic, minced 1 tablespoon balsamic vinegar 2 teaspoons Dijon mustard 1 teaspoon Worcestershire sauce 1/4 teaspoon salt 1/4 teaspoon freshly ground pepper 4 whole-wheat English muffins, split 4 lettuce leaves 1/4 cup Cherry Ketchup (recipe follows) 1. Place onion in a medium bowl, cover with ice water and let soak while you prepare burgers. 2. Preheat grill to medium (see Broiler Variation). 3. Place beef in a large bowl and gently mix in cherries, breadcrumbs, garlic, vinegar, mustard, Worcestershire sauce, salt and pepper until combined. Divide into 4 equal portions and form into 1/2-inch-thick patties. Make a slight impression in the center of each. (This is so the patties cook evenly and don’t puff up.) 4. Oil the grill rack (see Tip). Grill the patties until browned and an instant-read thermometer inserted into the center registers 160°F, 5 to 6 minutes per side. 5. Toast English muffins. Drain the onions. Assemble the burgers on the English muffins with onion slices, lettuce and about 1 tablespoon Cherry Ketchup each.

This is a serious matter given the state of economic crisis depending if you are from the US or another country where the economy there is also crumbling but to answer your question about healthy meals that are nutritious, delicious and also enough for the entire family of what 6..? well for dinner what about making a baked macaroni and cheese dish incorporating some ham, bacon and some vegetables like carrots, peas and broccoli or cauliflower kind of like a quiche but a bit bigger in size
