Yeah!! I can make fudge now!

A couple weeks ago, I had some friends over for a party and I made some goodies for the night. I heated up some chicken wings, baked a cheesecake and wanted to make some fudge. I haven't had fudge in a while and it was sounding very good... When I went to make it, I found out that I was way short on the 2nd ingredient - cocoa. I didn't feel like running out to the store for just that one item, so I didn't make the fudge. Last night I went to Sam's club and finally remembered to get some more cocoa! YIPPEE!!! I get to make fudge this weekend, except now I've got to pick up some whole milk first because it just doesn't taste right with skim milk and the milk I had bought for it before is long gone.

Bring it to a boil of 235 degrees and it will be just about perfect. Not boiling it long enough will cause it to not get hard, but boiling it to long will make it very hard. The humidity has nothing to do with it. We always have very high humidity in the summer and I've never had a problem because of that. The only time I had a problem was in high altitudes, before I had a candy thermometer. Try it with a thermometer and see if that helps any.

There are many different fudge recipes out there, but my favorite is one that a friend of my mothers always made for us. It's not one of the easier ones, and sometimes it doesn't turn out right. If you want to try it, here's how:
In a heavy saucepan, combiine 2 cups of sugar, 1/3 cup of cocoa, 1/2 cup of milk, and 1/4 cup of butter. Cook it over medium heat until it reaches 235 degrees - you need a candy thermometer for that part. Once it's reached 235 degrees, remove it from the stove and add 1/2 teaspoon of vanilla and 2 tablespoons of peanut butter. Mix it up really good, then pour it into a 8X8 buttered pan. It will take a few minutes to start getting hard, then cut it into cubes and enjoy!!!
Let me know if you try it and how it goes. If you don't boil it long enough, it will not get hard and will taste carmally. If you boil it too long it will get too hard and you can't bite into it.

lilybug, I don't like the ones with marshmallow or kayro syrup. I've never had it with condensed milk though, but I don't think I'd like it as much as this one. Let me know how it goes!

Yum!! My kids love it when i make fudge. I hadn't made it in a long time till the other evening. I made rum fudge , It wasn't too bad for my first time of making something other than regular fudge. I use to have my ex mother in laws recipe for fudge it was the best that I have ever had . No one could make it like she use too, but i lost her recipe over the years.

I can't make it like my mom's friend, but it's as close as we've gotten. Sometimes it turns out PERFECT, sometimes it's just ok.

Sam's Club has a package deal of fudge.
I am getting some this weekend.
It has all the ingredients to make 2 or 4 lbs of fudge in the box.

Mine has peanutbutter in it, and I put more in it than it calls for most of the time. I mean, I use HEAPING tablespoons, it's probably twice the amount you should use...

Hi reiny! Is there any cheesecake left? lol I would rather
have cheesecake! I'm not a big fudge fan. Never made the
stuff! My Mom loves fudge, but not me so much. I'm baking
another cake! This one is banana and I'm putting some more
buttercreme frosting on it. It's not what I really wanted
but I'm running low on cake mixes. Got to stock up next
trip to the store. So let me know how the fudge turns
out. I never tasted home made fudge. I might like that.
So what time can I expect my piece to arrive? And will
you be personally delivering it or will you be sending
it by post mail or fedex or ups? Just let me know so
I can be ready for it!

Well.... funny you should ask that... I told my husband that if we weren't doing anything this weekend we should head on up to Atlantic City... If we go, I'll drop it off "on the way"!!!

I have never made fudge myself before. My mom used to make it when I was little she made it for my grandma as my grandma always loved fudge she always took her some at Christmas. I love fudge all differnet types peanut butter fudge is the best! Yummy.

My mother never could make it right. Everyone was pretty glad when I started making it and it turned out good :)
