When baking sweets are you concern with Health?

I love to bake all kind of sweets, but lets face it, most recipes call for not so healthy ingredients, lately I have been substituting sugar for splenda, cutting on fat using 2% skim milk instead of whole milk. Some recipes comes out quite OK, others is not the same result. Iam working hard in finding recipes that does well with the substitutions. Has someone out there as experimented with these substitutions?

I do much the same as you. I do not bake often, but when I do I also use Spenda and 2% milk. My husband is diabetic, so I have gotten a few diabetic cookbooks. They give some really great recipes and offer substitutions that work well. I use rice oil, which is a bit healthier, and tastes fine, works just as well as vegetable oil. You can find it in the Asian section of your store, or at any Asian market.

Rice oil uh? Great I will try it, does it behaves the same as vegetable oil? I mean if the amounts you use are the same. Some oils are less heavy than others, therefore affects the texture of the final product. Thanks for the tip!

ez, I have found I can use the rice oil in the same way as any of the other oils. I have had no problems substituting it for vegetable oils.

Not really. I am careful not to add salt - a lot of food has too much salt in it in my opinion and salt is not good for you. But otherwise, when I bake, what I usually do is make sure to make small portions. So maybe our snacks aren't too healthy, but we only get a little piece of it as a treat at the end of our otherwise healthy meal.

You are right, salt is very unhealthy, but when baking if you are using any kind of leavening specially baking soda, the pinch of salt the recipe calls for it is very important because causes the leavening to react in the correct way. And the small portions is a super way to go for, you get the real taste in a appropriate amount.

I am concerned to a certain extent. I won't do artificial sweeteners because I don't want my toddler having them. Today I made some chocolate chip cookies and used whole wheat flour instead of regular white flour. Those are the kind of substitutions I like to do.
