This time of the year with every one getting groceries for Thanksgiving and holiday bakeing evaporated and Condensed Milk is out in those special Isles. Do you them any other time of the year. I like to use evaported milk in my creamed soups such as potato and chowders. It just make them taste so much richer. I have also used evaporated milk in my mashed potatoes. When I buy it and store it on the shelf I have found that it seperates and so I keep turning the cans to help prevent this. Do you find that storing evaporated milkk seporates. I don't use much condensed milk. I find that the recipes that call for it just to rich for us.

I stock up on evaporate milk this time of year. I use it throughout the year. I have noticed that it separates too. I shake mine up before I open it. It is time for me to stock up on it again too. I used my last can a few days ago. I rarely use condensed milk either. It is good in Mexican Coffee though.

My sister makes it. She takes a pot of fresh brewed coffee and pours it in a blender. Then she tosses in a square of Mexican Chocolate Abuelita by Nestle and blends it up. After that she pours some sweetened condensed milk in and blends it some more. I think she might add more cinnamon too(there is cinnamon in the Mexican chocolate). You can serve it hot or chilled.

I don't use canned milk.... I'd like to try it in mashed potatoes now though.

I like to use the canned milk in soups, chowders, gravies too. I also use it when I make ice cream, that makes for a better tasting and richer creamier ice cream. I always shake the can before I open it, so I never see if it separates or not. I use the canned milk when I make fudge too. Oh my, it is getting to be that time of year.

I have an ice cream maker too. One night the grandkids were here, they wanted to make some ice cream. I didn't have enough regular milk, but I did have some canned milk. It turned out good. I am making sausage gravy for dinner tonight, I will be using canned milk for that. My mom gives me several cans of the milk a month. She gets it from the Senior Center, they give her a box of stuff each month. She gives it to me. I had a bunch of it that I had to throw out, I had it for awhile and it got past the date. After that I said I was going to use it, then I thought of all kinds of ways to use it.

Thanks Polly for stoping by. I never thought about evaporated milk for Ice cream. I do have one of those ice cream makers that you freeze the main bowl. so I will give it a try too. I'm getting some good ideas for other uses than I had thought about before

I never think to use it for anything other than holiday baking. I guess it's because I always have milk on hand. The grocery store is just a few block away, so we'll make a run if I need cream. Maybe I should take a closer look at my pantry before I do that. LOL
We use the Sweetened condenced milk to make apple dip. Take the can, unopened, and place it in a pan of water. Make sure the whole can is completely covered. Put it on the stovetop and boil the water. Make sure the water level always covers the can (so it doesn't explode) Boil it for at least an hour--2 or 3 is better. Then let it cool, water and all. Open it up, and you'll have rich brown carmel. Perfect for apples or ice cream topping.

Thank you for the best response. Have you tried making the apple dip? I was watching a PBS show the other day, and the lady made carmel with the SC Milk, only she poured it into a pie plate. Then she baked it in the oven (a low temp, I believe like 275) for 2-3 hours. Same idea, only a little safer than the boiling a can. Either way, its a good dip!!

I use condensed with my coffee and evaporated with my mashed potatoes.
Thats traditional in my life, I got it from my parents at home as a child.
Basically its how people in Trinidad use these things.

I only really buy the condensed milk during the holidays, or if I'm planning on making special desserts and candy for other gatherings. When I do buy it, or the evaporated milk, I usually get it at Marc's or one of the other discount chain stores, or I wait for a sale and then stock up on it. I find it much cheaper there and it doesn't taste any different in the recipies I use them in. I do the same thing as you do, flip the cans every now and again. Yes, I have had it separate a few times. Never tried the evap. in mashed potatoes, that sounds pretty good and I'll have to try that. Never thought about using it in the homemade potato soups, etc, either. I'll bet it's a whole lot more tasty and creamier. Thanks...good hint!

I never use them. I really do not know why. I really do not use any recipes that call for it actually. I am not much of a cook, I guess LOL.

I use evaporated milk often. The favorite meatloaf recipe calls for it plus some of my husband's favorite casseroles call for it.
As for condensed milk, I used it when I need to make dulce de leche and occasionally for other baking. I love to put it in my coffee but that's SO bad for me!

Holidays is when it gets used the most. I do use it in mashed potatoes at other times of the year. Makes them very creamy. Good for broccoli soup too.

I use evaporated milk when I make macaroni and cheese instead of regular milk. When I was a child, and my parents did not have much money, we would use evaporated milk for our cereal. My mother would mix the canned milk with water and refridgerate it. We also used canned milk whenever we made hot cocoa or chocolate milk. I have only use condensed milk once, when I made a lemon ice pie. That was a good treat, I think I may make it again.

When I was a kid I lived with my grandparents and they usually had a cow to milk. Later whne the creamery closed they sold the cow and started using eveeporated milk for thier creeal and coffee. I remember grandma making hot cocoa with the canned milk too. Some things are just as good now as they were then.

I use evaporated milk and never seem to have a problem of it separating. I never use condensed milk because I do not bake or make deserts from scratch where is seems to be the only place it is used. I keep a couple of cans in case I run out of milk along with some powdered milk just in case I run out in the winter and there is a storm.
What I would like is to find out how to whip evaporated milk. I tried one recipe from a condensed milk manufacturers site and it did not turn out well.

I think the main secret to whipping any kind of milk, is to keep it cold. Try putting your bowl in another bowl with ice water. That will keep it cold while you are whipping.
Evaporated milk and condensed milk are different things, too. That may make a big difference in what you were trying to do.
