Quick and simple Chili Mac
1 box of Macaroni and cheese mix
1 lb of ground beef
1 small diced onion (Vidalia is best)
2 small diced bell peppers (one green, one red for aesthetics)
Shredded Mexican blend cheese
Salt and Pepper to taste.
preheat oven to 350
Brown the pound of ground beef.Drain the fat. Prepare the mac and cheese as directed on the box. mix the ground beef into the mac and cheese, add diced onion and peppers, add salt and pepper to taste (I've found 1/2 teaspoon of each to be enough). mix all ingredients well and put into an appropriate sized casserole dish. place shredded mexican blend cheese over the top (a light sprinkling is fine) and place in the oven for 20 minutes.
for extra zest dice one or two small jalapenos into the mix (not for everyone)
My kids always asked me to cook this for them.
