Becky's Pumpkin Cupcakes Recipe

Makes 24 cupcakes
From the kitchen of Becky Stasik
1 package (18.25 ounces) spice cake mix
1 can (15 ounces) Libby's 100% Pure Pumpkin
3 large eggs
1/3 cup vegetable oil
1/3 cup water
1 container (16 ounce) prepared cream cheese or vanilla frosting
assorted sprinkles
Preheat oven to 350 degrees. Paper-line or grease 24 muffin cups. Blend cake mix, pumpkin, eggs, vegetable oil and water in large mixer bowl until moistened. Beat medium speed for 2 minutes. Pour batter into prepared muffin cups, filling 3/4 full. Bake for 18 to 23 minutes or until wooden pick inserted in center comes out clean. Cool in pans on wire racks for 10 minutes; remove to wire racks to cool completely. Spread cupcakes with frosting.

Thank you for this recipe lovelylady:) I love any recipe that call for pumpkin,spice cake mix & cupcakes! hehe.. My son love's pumpkin & cupcakes also and I will definitely make this recipe this holiday season. In fact, I'm going to bookmark this page now. This looks sooooo good and yummy. I love to do a lot of baking during the holidays and I like to try new recipes I find online and recipes from friends and family. Thanks again!:)

Thanks for sharing. Sounds great. I love fixing cpcakes, espcially for the kids t oeliminate a lot of fingering a full size cake. I'll definately have to try this one!

These sound really good. I think I would like them. I like to bake when it is cold outside. Cupcakes are delish.
