What to eat?

I really fancy making a really nice dinner for myself tonight has anyone got any ideas for either chicken or seafood recipes?

If you have a rice cooker: for 2 people, one cup of rice (preferably arborio) with 3 cups of chicken stock. While this is cooking, dice your chicken or set aside seafood for 2 people, plus a selection of fresh vegetables cut in small pieces - say spring onions, red capsicum, mushrooms, fresh or frozen peas, squash - and then cook them off in oil in a frypan. You can add pine nuts or slivered almonds if you wish, and with the chicken, a little diced bacon. When the rice is finished, thoroughly stir in the cooked meat and vegetables, then serve immediately. Whole thing takes maybe 25 minutes, and is filling and delicious. A side salad goes nicely if you wish.

Ooops, forgot seasonings: garlic goes well, and a fresh or dried herb - I enjoy tarragon with either dish, but basil, rosemary, thyme, all go well. If you have a seasoned pepper mix, some of that can be added.
