Potato bake
INGREDIENTS
2 teaspoons olive oil
4 rashers bacon, chopped
1 small brown onion, chopped
1 garlic clove, crushed
1.5kg potatoes, peeled, thinly sliced
300ml carton light thickened cream
½ cup low-fat milk
1½ teaspoons chicken stock powder
½ cup grated tasty cheese
METHOD
1. Preheat oven to hot, 200C. Lightly grease an 8-cup capacity (25 x 32cm) baking dish.
2. Heat oil in a large frying pan on high. Sauté bacon, onion and garlic for 4-5 minutes, until onion is tender and bacon is golden.
3. Layer potatoes and onion mixture alternately in prepared baking dish.
4. In a large jug, whisk together cream, milk and stock powder. Pour over potatoes. Cover with foil. Bake for 1 hour, until potato is tender.
5. Remove foil. Sprinkle with cheese. Bake a further 15 minutes, uncovered, until cheese has melted and is golden.

I haven't had this in ages, but this is one of my favorites from my childhood....my sister and I fought over it! If you are vegetarian you can take out the ham or substitute something else.
MASHED POTATO PIE
5 med. potatoes, peeled and cubed (about 1 3/4 lbs.)
1/4 c. butter
1/4 c. milk
1/8 tsp. pepper
one mozzrealla cheese, cut into cubes
Ham steak cut into cubes (optional)
Cook potatoes in boiling salted water until tender. Drain well; mash. Add butter, milk and pepper and stir until smooth.
Fry cubed ham steak up in a frying pan until golden brown.
Put cheese, ham and mashed potatos in a baking dish (they should be all mixed together so the ham and cheese are throughout the mashed potatoes). Bake at 350 degrees for 20 minutes. If you want it a little crispy on top, put it under the broiler....but keep an eye on it! Yield: 6 servings.
