My hubby likes lemon pepper marinade. I could go for a sweeter BBQ type marinade. Either is good if used for a few hours. But usually we put it on the fridge and let it "soak" over night. Makes for very tender chicken.

Hi Lilybug, we prefer either spicy or saltish marinades; so I would usually use black pepper sauce or curry powder or a mixture of black soya and oyster sauce. I add in chopped ginger and garlic as well. It doesn't take long; I usually let it stand for an hour or so, before I bake or steam the marinated chicken.

You can marinate any were from 30 minuets to 24 hours depending on how much time You have, but if longer than an hour You should keep it in the fridge. Teriaki is great if You are in the mood for something Oriental. Or sweet and sour, use some vinegar, ketchup, and sugar. Use BarBque sauce. Or just a brine can work wonders, Cover Chicken with water and depending on how much You have Add more or less, A tablespoon each of salt and Accent flavor enhancer.
