Instant mashed potatoes work for me but...

For time constraint reasons, I had to settle with instant mashed potatoes and Hungry Jack is good. I don't add water just milk and butter and a pinch of salt. But if I had more time, I would prefer cooking them out of fresh potatoes. I wonder if you ever figure out the difference. Some say it is about the same, instant and fresh. But I think there is a difference.
