Christmas Goodies

Need some help here please - I'm going to be making rum balls, chocolate truffles, coconut ice and white Christmas and I'm wondering how far ahead I can do it.
I'm having visitors from the 23rd Dec and so I will be busy. I wanted to make these goodies and soon as possible and refrigerate them but I'm not sure of the time factor. Can anyone advise me please?

I'm inclined to think so too. Usually, recipes say if something can be frozen ahead of time but none of these have said so. I've checked several different ones with the same result. I may have to consult one of the ladies in The Country Women's Association...

I've made rum balls over a week ahead of time. Even after I ate the 1st batch (with help from a neighbor), and had to make a 2nd batch, they were fine. As long as you keep them in an air-tight container, I think they actually get better after a day or 3. Same with the truffles. Air-tight container...but don't refrigerate. If you do, then when you take them our to serve, as they warm up they'll sweat and get clammy.
Not sure about the last two items. If the coconut ice is frozen, then certainly that could be make ahead.

I would think you could make them ahead of time by atleast 2 weeks if needed. My mom used to make fudge a month ahead of time and freeze it. But would keep in a covered container for several weeks.

Well now. If I leave about the 20th I will be you on the 22nd. A longish jet lagged sleep and I will be human again about Christmas Eve. Does that sound about right? [Sorry? She meant how far ahead she should make the goodies? She's not making them for me? Are you sure? Oh well. I've no idea? Let's say that they will be fine from about a week before Christmas Day. I'll take sleeping bag? Stay here. Yes dear, if you say so. Sleep in the shed? Again. Stop being so forward you say. OK]

I couldn't do that! I hope we'll have a bigger freezer by the beginning of the month so I can start baking early this year - at 7.5 mos. pregnant, I just can't go for a week non-stop like usual! If not, may have to pare my traditional list this year.
There is no way I could do all my holiday baking/candymaking in one day - probably not even in 24 hrs. straight working in the kitchen! :)

Same here SaraCate. These goodies will be consumed over a period of about a week or as long as they last. I'm having family to stay over that time. I will certainly not be cooking things fresh each day as I'm looking forward to spending time with my grandkids and daughters.
There is no fear of course that anything will be stale...that's a silly notion. I love to do my Christmas cake a couple of weeks before. Stored correctly, it becomes better as it's the moist type.
