I'm going to try turkey soup - again...

I have only made turkey soup one time and it was VERY bland. I think it had the same problem I used to have with my gravy. I've finally figured the "secret" out to tasty gravy so I'm going to try that with the soup. I'm cooking the bones off this morning and hope to have some "good" soup for dinner tonight.
Do you make soup out of your leftover turkey or just sandwiches?

I took the left over carcass covered it with water added some celery carrots and onions along with some seasoning and a dash of hot sauce and came up with a pretty good soup base. I then took the rest of the meat from the bones and added that to the soup base. I pureed the vegetables because they were pretty mushy but still add to the flavor of the soup.

Salt and spices. Lots of spices. That's the trick to battling the blandness. We have our turkey carcass in the fridge and I'll be boiling it down for soup today! We love that particular part of the 'leftovers.' We use lots of veggies and egg noodles.

I wasn't planning on making soup, so I have no noodles, but I do have lots of veggies. It turned out really good, just needed to be salted a little bit.

I love Turkey soup I do cook down the carcous with little bits of stuffing and all. I do not clean the bones off well and I even put all the left over fat drippings and stuff from the pan. It looks gross but makes the best soup.

I always make turkey soup after Thanksgiving. I'll strip off the usable meat for sandwhiches and such, then freeze the skin, fat and bones for later soup starter. I also save my vegetable trimmings, onion skin, celery stumps etc while preparing thanksgiving meal and toss them in with the turkey bones. I'll brown everything in the oven before boiling. I use whole spices for seasoning the stock usually pepper corns, celery seed, bay leaf and parsley. I bring the pot to a boil for about 10 minutes then simmer on low for an hour or more. I let the stock cool and skim off most of the fat and strain out all the bones and vegetable trimmings that have boiled down to nothing. Then I'll add cubed turkey meat that I saved, fresh chopped vegetables, carrots, celery onions etc whatever I have. To enrich the flavor I'll often brown the vegetables in a skillet first. If I still have a bit of gravy left I'll add that as well. I bring the soup to a boil and then simmer till the vegetables are tender but not mushy. Then I'll give it a final seasoning with some salt, pepper, and onion powder or a no salt seasoning mix like Mrs Dash. I'll add either potatoes or some kind of noodles depending on how much broth I have. I'll serve the soup with bread chips made from left over dinner rolls sliced thin and toasted in the oven. This usually make a tasty soup.

I have made turkey soup before. I also make soup from the bones of whole chickens when I get the roasted chickens at the store. I normally do a chicken noodle or in your case turkey noodle soup. Mine is pretty basic usually. Egg Noodles, carrots, and celery. I made chicken and noodles the other night from leftover chicken. It turned out pretty good.

I usually make turkey rice soup with the leftovers - and rely heavily on celery, onions, carrots salt and spices to add flavor. I also cook the carcass down for hours to extract all of the flavor. Since I'll be cooking a second Thanksgiving dinner tomorrow, I'll wait till Monday to make the soup - and I'll have two carcasses to cook down instead of one!

Hey reiny! Well I am about all turkeyed out by now! I still
have so much left too! After 3 nights of turkey dinners I've
about had it! I've never made turkey soup before, but then
again I've never made any kind of soup! I'm not big on any
kind of soup. My Mom and Grandmother used to make great
chicken soup, but I've never tried to make that either.
I've already thrown out all the bones and have only the meat
left. I am going to make a nice big bowl of turkey salad
tomorrow with most of the left over turkey. I promised my
girlfriend that she could have some of that too. She came over
for Thanksgiving Day and again for dinner last night too. She
had brought over a roast beef and some other stuff that she
made so I'll give her some turkey salad too. I'm sure your
soup will come out great! Let me know how you do!

I tell ya, I was so hungry for turkey a week ago! I could still eat a bit more of it though :) I might make a turkey caserole with the leftover meat since I'm not big on sandwiches. I was looking for a tureky-pot-pie recipe because I've never made that before either... There are quite a few things to do with turkey!
