What to do with leftover mashed potatoes?

My favorite way of using leftover mashed potatoes is for what my mom called potato patties or potato cakes (same thing). Mix the cold potatoes with a raw egg or two depending on how many you have leftover. Then form potato patties like you would hamburger patties and fry them until they are browned making sure to heat through thoroughly. These could be used for breakfast or any other meal as a side dish.
I rarely have leftover mashed potatoes because they get eaten in the main meal. But often when I do have leftover mashed potatoes I also have leftovers of the rest of the meal so I just heat them in the microwave and use them as mashed potatoes again without doing anything to them.

When I have leftover mashed potatoes I make potato patties.just take your cold potatoes and mix in an egg I also chop up some onions and mix all this together. Than you make your patties just like you would when you make hambuger patties. Fry them in a skillet with a little butter untill they are some what brown. They are very good.

hi friend, this is a recipe which i am writing down for you for your left ovr mashed potatoe.d. i hope you will try it because its very easy to make and tasty to eat.
3c leeftover mashed potatoes
1c corn drained
2tbsp caraway seeds
4oz cheddar cheese, cubed approx 1/2 inch
2 eggs
3/4c flour
1 small onion chopped
combine potatoes, corn caraway seeds n onion. beat eggs slightly and add to mixture . slowl y fold in flour until consistency is tacky. add cheese. flour hands and form potato mixture into pancake size. fry until golden brown. its done.

I looked up some potato pancake recipes and none of the ones I found were made with leftover mashed potatoes. They were made with fresh potatoes diced up and the total recipes varied according to cook, but definitely included flour and were more like a regular pancake. You can do a search for potato pancake recipes on your favorite search engine to find them. Some of them sound really good too.

Make your own version of Uno's Pizza Skins.
Using the pre-made dough you can find in any grocery store, bake the pizza crust for a few minutes until it's set but not crispy. Then layer the slightly heated mashed potatoes (seasoned with salt and pepper) and top with cheddar cheese and bacon, or whatever other delicious topping you like!

I have no idea really as to what shepards pie is.
I have used leftovers for potato pancakes. Also another great idea is to bake a potato then hollow it out half way adding the mashed with some cheese etc. The rebake for a little longer. Give that a try. It's great, cheap, and easy.

How about making them in to potato pancakes. You can mix them with one beaten egg, then make patties out of them like you would make a hamburger patty. Then coat them in seasoned bread crumbs and fry them in a little bit of oil.
To add more flavor add a little bit of sour cream and chopped green onion to the mashed potato mixture before frying.
