They do say that if you eat carrots then you will be able to see better in the dark. But I think that is an old wives tale like an apple a day keeps the Dr away.
I would just say eat a nice healthy diet, water is good for all the body so it might make youe eyes look brighter.
Some people put slices of cuember on there eyes to brighten them up as well

There are very few good reasons for not eating lots of fruits and vegetables. Actually, I can't really think of any good reasons to not eat them. There is a long list of the health benefits you will experience if you eat fruits and vegetables every day. One of those benefits is healthy vision. The antioxidants called lutein and zeaxanthin found in many fruits and vegetables will decrease your risk of suffering from the age-related eye diseases mascular degeneration and cataracts. I don't know of an exact fruit but I am sure that squash helps promote good vision.

Carrot and Vitamin A rich Fruits - Papaya and Mangoes are good for Eye Health .
Besides carrots, good foods to eat for eye health include corn, kiwi, pumpkin, zucchini, yellow squash, red grapes, green peas, cucumber, tomato, butternut squash, green bell pepper, celery, cantaloupe, sweet potatoes, and dried apricots. Eat the freshest and brightest fruits and vegetables. Pick the most-colorful ones you can find--red, dark green, orange, or yellow. Be sure to eat dark green leafy vegetables, such as spinach, kale, turnips, and collard greens.
A dietary supplement containing high doses of the antioxidant vitamins C, E, beta-carotene, and zinc provides the first effective treatment for slowing the disease's progression.
