Tips for a surpise dinner

My hubby will be gone for a couple of months, and I want to make him a surprise dinner, but I'm not sure on what to cook. He loves italian food, so now I'm having a hard time deciding on what to pick for our dinner.
What would you cook for your other half if he/she was going out of town for a while and you wanted to make a special dinner for him/her?

My personal favorite Italian dish is linguine with clams. A very simple pasta that we like at our house is linguine tossed with olive oil garlic and crushed red pepper. Good luck with the menu planning.

My ex-boyfriend was Italian and loved Italian food. One night, my friend and I got together to make a surprise double-date dinner for our guys. We prepared manicotti from scratch (it's actually really easy to make the filling and stuff the noodles). Why manicotti? It is delicious and most people overlook it when making Italian. We also made garlic bread and a chocolate cake for dessert. Our boyfriends were surprised and LOVED the food.

Rachel Ray has this you won't be single for long vodka pasta thing that looks really super good. I'm sure if you go to her website you can find something like that. I guess that there are many delicious italian recipes to choose from.
