Do you really know Chinese cuisine?
There is a old Chinese old saying: min yi shi wei tian(phonetic transcription of Chiese characters); A literal translation is:people regard food as their heaven/ for the common people food is heaven. To restate in a paraphrase is:food is the first necessity of the people/food is the prime want.
Chinese cuisine is as long as in origin and rich in content as Chinese culture. To the Chinese, eating is a kind of culture in itself.
If you know a little about Chinese cuisine and you will know that there is no such thing as simple "Chinese food", but a large and varied selection of Chinese cuisine.
Chinese cuisine places great emphasis on three elements: color,aroma and flavor.
Chinese cuisine is based on five tastes:sour,hot,bitter,sweet and salty. The main cooking mathods include sauteing,frying,braising,steaming,barbecuing and stewing.
Chinese cuisine falls into four major categories:Shandong cuisine along Yellow River valley,Sichuan cuisine along the upper reaches of the Yangtze River,Jiangsu-Zhejiang cuisine along the middle and lower reaches of the Yangtze River and China's south-east coast, and Guangdong cuisine(Canton cuisine)along the Pearl River valley and China's south coast.
This is a brief introduction to the Chinese cuisine.
