i'm not sure if we are using aluminum pots but is it the same as teflon? i read too that teflon coated pans are not good for our health and the environment. i would love to have a bunch of cast iron pans though (they say that those are the best).

I love my cast iron, love my "pyrex,"....but aluminium and/or teflon or non-stick pans are not in my retinue! I won't even use aluminium foil....or deodorant with aluminium hydroxate! watching a recent TV program, Teflon/non-stick pans heated over 350 degrees give off toxic fumes (non-detectable by us!) I use what is called Anodized Aluminum Cookware. It is light weight which I need because the regular stainless steel is just too heavy for me. The anodization process hardens the surface of aluminum cookware making it non-stick, scratch-resistant and easy to clean. This cook ware doesn't react to acidic foods such as tomatoes and lemon juice.
You get more aluminum in antacids containing aluminum and antiperspirants which contain aluminum. I don't use those teflon pans very much because the teflon comes off and you have to keep replacing them. They also give off fumes that can be toxic over a period of time.
