Tuna Pasta Salad
1 (12 ounce) package elbow macaroni
1 (6 ounce) can tuna, drained
2 stalks celery, chopped
2 tablespoons chopped sweet onion
1 (10 ounce) can baby peas, drained
1 cup mayonnaise
2 tablespoons sweet pickle relish
salt and pepper to taste
1 pinch paprika, for garnish
Bring a large pot of lightly salted water to a boil. Add the macaroni, and cook until tender, about 8 minutes. Drain and rinse under cold running water.
In a large bowl, stir together the macaroni, tuna, celery, onion and peas. Mix in the mayonnaise, relish, salt and pepper. Garnish with a sprinkle of paprika. Cover and chill for at least 1 hour before serving.

It's just morning here, but I'm planning on having tacos for dinner tonight. I have free-range beef and chicken that I'll be thawing out later this morning. I have organic cheese that I'll shred, organic whole wheat taco shells and organic green leafy lettuce.
My sons love tacos and the youngest has really taken to eating free-range beef (no antibiotics, steriods and allowed to graze in open fields rather than stand in a stall all day eating...well I don't want to know what those poor animals are forced to eat) Both of my sons load their tacos with the lettuce and it's a terrific way to get them to eat their greens. I buy dark green lettuce, with a mixture of cabbage, beet roots, etc and my hubby and I make a big deal over how they load up on their greens
Their desert will be, a fruit smoothie using organic fruit (bananas, blueberries) mixed in with an organic ice cream and Akai juice (and they don't know it, but I add a tablespoon of either bee pollen ort crushed flax seed to the mixture before blending)
That is what I'm serving for dinner tonight!
