if you love corned beef hash, but not the carbs, this is a must read

My husband and I are on a low-carb diet. We both smell carbs and gain weight. So we are constantly looking and tinkering with recipes for low-carb meals. My husband made a winner this morning. Both of us love dropped eggs on corned beef has, but had given it up because one can of corned beef has has 24 grams of carbs per 1 cup serving, hence that would be 1 of beef added to our thighs, hips and stomach! And who need that! So here was the tinkering my husband did this morning. He bought some plain canned corned beef (zero carbs). It comes in a "Spam" can. Usually in the same isle that you find canned hash. He then bought a head of cauliflower. He put the corned beef in a frying pan with oil, microwaved the cauliflower (about 1/3 of the head) until it was soft, mushed it up and fried it in the same pan as the corned beef! You would never know the difference. He also put in some brown and serve sausage thinks and bingo, we had a delicious just about carb free breakfast.

If you like corned beef recipes which are fairly low carb, I recommend this no pastry quiche -
Take a tin of corned beef, mash it with the back of a fork, add half a chopped onion and mix, spread it in the base of a caserole dish. Beat four eggs with a small tub of cottage cheese, pour it over the top. Grate some cheese over the top, and shove it in the oven, medium heat for about 20 minutes.
