My husband I love smell carbs and we gain weight. We have gone on a very low carb diet so we are always looking for low-carb recipes and low-carb anything (we've found websites that have all kinds of recipes). One food we love but had to give up is corned beef hash. Did you know that one cup of corned beef hash has about 24 grams of carbs? Who needs that. So, my husband tinkered this morning. He bought a can of corned beef hash (zero carbs)! It comes in a "spam" can! He also bought a head of cauliflower. He put the hash with oil in a frying pan, on low. Then he microwaved the cauliflower until it was soft. Once soft, he then chopped it up to small pieces using a fork. Put the cauliflower in with the corned beef and fried it all up together. We dropped eggs over it and added some brown and serve sausages. We had a almost carb free delicious breakfast! I know it sounds wierd, but cauliflower has almost identical texture to potatoes. Try it you may find you like it!

it is true that we can always innovate in the kitchen and be creative by producing some recipes of our own that fits our budget and very friendly to our health. this idea is what you are now introducing unto those who may partake in your discussion. it is not just a matter of corned beef hash, it is the idea of being creative at cooking that gets to the fore here. this is what my mother has told me to do since i was very young. cooking is a matter of innovation. do make good food out of what is available. see for yourself what is there which can make a good meal, then plan the meal. it is more fun that way, right, tmelzard?

I couldn't agree with your more trinidad! My husband and I are always experimenting in the kitchen, his son (my step son) is a chef and has taught me a lot of tricks of the trade. We've had a great week with cooking low-carb. We are going to the store this afternoon to get needed items to make home made chocolate candy and brownies (yes those too are low-card). I love the internet, it has changed my world! I found a miracle website, www.miraclenoodle.com. The site has zero net carb angel hair pasta, so I said, we'll try it. They delivered very quick. The texture is awesome and much like tofu, the pasta takes on the flavor that you add it to (we made a parmesan cream sauce with sweet sausage and artichoke), it was delicious (another low carb home made recipe). I also made a low-carb cheesecake using almond flower and sugar substitute Splenda. For the crust I used chopped up nuts (macadamia, pecan and roated peanuts). Covered the top with blackberries and rasberries. Finally drizziling low-carb chocolate sauce. My husband was in heaven.
