Please Help With Homemade Taco Seasoning Question!!!

My husband is on a reduced sodium diet, so a lot of the conveniences we previously used are now no-nos. Last night we mixed together a recipe off the web for homemade taco seasoning. It was 2 tbsp no-sodium chili powder, 4.5 tsp cumin, 5 tsp paprika, 2 TBSP onion powder, 1 TBSP garlic powder, one-eighth tsp cayenne, 2 tsp flour. Now, I will admit, I did NOT use the flour. It tasted good, but when I was cooking it it made a foam on top which I had to keep folding into the meat, and it looked... grainy. A few of the tacos actually seemed to have a grainy texture. Is this because I left out the flour? Thanks in advance.

I make it all of the time following a similar recipe. I just guess it right. LOL It should have been fine. Could it have been the seasonings?

I'm not really sure... the spices were new (why my hubby decided to open the new ones rather than the ones already opened, I can't fathom). We just dumped them in a baggie to mix them... maybe I should have put them in the coffee grinder? I didn't think that would be neccesary since all the ingredients were already powder. Well, at least Mr. Picky (my hubby) wolfed them down, regardless. :)

I make my own taco seasoning, too... I actually came up with my own recipe using my sense of smell and taste - and it is so good! - Even though I made it on a whim because we were out of seasoning packets, my family (and young daughter) loved it so much that we will never go back to the packets! I use Tastefully Simple seasonings - Simply Salsa Mix & Fiesta Party Dip Mix, Garlic Powder, Onion Powder and a little Chili seasoning.... (just a little bit of each... I defitely don't go overboard). It doesn't have that redish/orangish look like the packets make, but it tastes WAY better. I would suggest just following your senses and only adding what you think you need to make the seasoning... as for the foam, I don't know, but I it doesn't sound right and I probably wouldn't make that recipe again!

I would have thought that formula would work fine. I don't know what happened with your tacos or why they turned out grainy. I guess you should just play with the recipe until you find something that will work for you.
