How can you eat a vegetarian diet on a budget?

I am a person who like most of us is having trouble making ends meet. I don't have any room in my budget for anything extra. Even so, I would like to begin a vegetarian diet. How can a person eat a healthy vegetarian diet without spending more money on food. Thanks for your help and have a happy, healthy 2009.

I think it's cheaper to eat vegetarian than not because of the cost of meat. Protein in other forms can be pretty cheap. Eggs, peanut butter and cottage cheese are pretty cheap if you will eat dairy; otherwise, lots of beans and other legumes. Be sure to get the freshest vegetables and fruits that you can to get the most nutrition from them. Even then, it shouldn't cost you as much as eating meat.

Well I think you would be saving by just not buying meat for a start, I buy meat for my cat and it is rather expensive, I think buying certain fruits and vegies when in season and perhaps freezing a few meals at one cook up can help, I like to eat a lot of rice and potatoes so you can make some good mixes of meals just by adding to those...and maybe even cutting meals back to a little smaller can be good i think we all tend to eat too much anyway...I hope we all can help you here..
