Yes, I ALWAYS make my kids' lunches the night before. My kids each like different things. My son likes to have a big container of watermelon, a BLT, or some yogurt. My daughter likes it when I layer vanilla yogurt with berries. She also likes banana slices sprinkled with cinnamon sugar, or a bagel with cream cheese.
Sometimes I cut up chunks of fruit for a fruit salad. Strawberries, blueberries, pineapple and melon are favorites, and stay fresh in my kids' lunchboxes.
Once in a while, my daughter asks for Uncrustables, which are premade, frozen sandwiches with no crust, made by Smucker's. You put the frozen, individually packaged item in the lunchbox (no need for a cold pack), and by the time your child goes to lunch, the Uncrustable is ready to eat. Those are available in several varieties, and are a nice option to have on hand for times when I don't have fresh fruit in the house.
Hope that helps!

My son mostly eats school lunch anymore, but when I made his lunch for him I usually did it the morning of. Is it the bread of the sandwich she does not like? If it is you could try using a tortilla instead and making her a wrap. Does she eat salad? You could try sending her with a salad and vary the things that go on it. You could maybe try different things in the pasta salad or different types of soup to keep her from getting bored with it.
