Does Chinese food also include dried vegetables?

I like Chinese food and more so due to the fact that most vegetables are saute'd rather than cooked in the conventional style. This prevents losing nutrients while cooking.
I was wondering if Chinese cooking also uses vegetables that are either sun-dried or salted and dried for use later?

I like Black mushroom and Szechuwan pepper used in chinese dish.

Yes,it include a lot.Such as dried agaric,mushroom,white fungus,kelp and many others~~~And some district love to make pickles~~many kinds of pickles~~

Well dried seaweed is quite popular in chinese dishes, and so are dried chilis.
