Does anyone have any good recipes for chicken. Besides baking chicken, broiling it and frying it and putting it in salad. Does anyone else have a different way of how the make chicken and with what. Thanks.

Okay here is a Persian recipe for a one dish meal with rice chicken raisins and cinnamon. Very exotic and wonderful. Because this dish is steamed it could be considered light. This dish is called Kish Mish Polo. You will need: 4chicken legs 4 chicken thighs, 1 large white onion chopped, 3 cups of long grain basmatti rice, olive oil, salt, pepper, and cinnamon, raisins black. A large frying pan that will fit all the chicken and 1 large rice pot to fit the chicken and rice and has a little room to grow. Take 1 cup of raisins and soak in large bowl with warm water this step can be done hours before cooking because you want the raisins to soak up the water and become plump. Heat up your skillet and add a little oil just to prevent the onions from sticking. Add onions and saute till clear. Add chicken to pan and season with a sprinkle of salt, pepper and cinnamon. You want the chicken to brown on the outside and the onions will start to caramelize. Once the chicken is half cooked bring the heat down to low and quickly strain the raisins and add to chicken then cover. Meanwhile in a large rice pot fill up with water almost like your cooking pasta and salt the water so it tastes like the sea. Bring to boil. Once boiling add the rice and stir so it doesn't stick. Put timer on for eight minutes and keep stirring. Get a strainer ready. After 8 min. the rice should be half cooked, strain rice. Put pot back on stove on high to let remaining water evaporate. Once evaporated add a little oil just enough to cover bottom of pot. Place half of the rice in pot then all of the chicken mixture and cover with rest of rice. Place a paper towel on top of the pot and cover with lid bring temp down to med low or low. Set timer for twenty minutes and viola dinner is done! Fluff rice up with fork or spatula some people debone it before serving it's up to you.
