I really like Symphonic Metal, but really the only bands I listen to that have this sound are Within Temptation and Nightwish.

I can't stand Nightwish - way to operatic/high pitched for my liking but I do like Epica and Within Temptation. Plus lesser known UK based band Season's End who are well worth checking out!
