Hate eggplant

I used to dislike eggplants; then I ate an eggplant dish at a restaurant, that was quite nice. I don't have the recipe though. The eggplants is cooked till soft with bean sauce, dried shrimps, and a few slices of red chillies and fried onions - it is very tasty!

I love egg plant but I love to eat period. I prepare my eggplant as follows: I cut my eggplant in circles not to thick and not to thin. If you cut them to thick they will be kind of crunchy and not to thin if you cut them to thin they will be really soggy. Once I get the eggplant cut up I dip them in about 2 egs that have been beaten. Then once I dip them in the eggs and dip them in cornmeal that has been seasoned with seasoning salt,garlic powder,pepper and onion powder (sic seasonings). Then I dip them in hot cooking oil until they turn light brown it probably will only take about 5 minutes I think I never timed myself. Hope you like

Oh I love to ear eggplant. There are recipes of eggplant that I like to eat. I love it when You blanch the eggplant, mash it then dip it into beaten egg and fry it. It taste really good with ketsup on it. You can also slice the eggplant into small pieces and fry it then put beaten egg on it. Eggplant taste really good in this type of cooking. good luck.
