How do you fry your rice?

I have been playing with my fried rice trying to get a good flavor lately. It is pretty good, but I have hit a wall as far as improvement. I wanted to see if anyone had any tips for how to make it better. Right now I fry my rice in vegetable oil on the highest heat possible. I add in butter, pepper, small amounts of salt, soy sauce, and a little terriyaki sauce. Then I throw in an egg or two as well as some small vegetables. Sometimes I throw in some garlic or other small amounts of spices. Are there any other ingredients I should add? I have heard sesame oil is better for friend rice than vegetable oil. I haven't tried it yet, but is that true? Thanks!

Hi, besides eggs, I usually add dried shrimps, sliced Chinese sausages and light soy sauce. I like spicy, so I would add a bit of cut chillies or chilli paste. And lots of fried garlic, which add to the flavor. And we once tried using salted eggs instead of normal eggs - great!

I've added some salad shrimp to the rice before which was really tasty. Some Chinese sausages also sound pretty good. I like spicy things, but I've never tried a spicy fried rice so that is definitly a posibility. Thanks for the response.

I do not know but I LOVE fried rice and I wish I knew how to make it. I want to try it sometime but I'm afraid I'm going to mess it up. I love the pork recipe that was posted above, I'll have to try it!

You should try to make it sometime. It may not turn out as great the first time, but after a few shots you will be able to make it well. I hope it works out for you!

Here's how I fry my fried rice. Heat some olive oil in a skillet. Add minced garlic and fry until brown. Add mixed veggies (corn, carrots and peas). You may add an egg or some chicken pieces. Add the rice. Season with salt. And that's it!
You may be wondering why I only add salt. My mother who lives with me is diabetic and hypertensive so we go easy on the seasonings.

The Barbecued Pork Fried Rice Recipe is a great easy and tasty fried rice recipe.
I like this recipe a lot, you are welcome to try it.
Ingredients
1 1/2 cups of long-grain rice
1 cup diced barbecued pork
2 eggs
3 tablespoons oil
3 green onions, sliced with some green included
1/2 teaspoon salt
1 tablespoon soy sauce
Directions
Boil a medium pot of salted water
Stir in the rice and boil for 10 minutes (until done)
Drain the rice and set aside to cool
Beat eggs lightly
Heat the oil in a wok over high heat
Add the green onions and eggs, and stir for 10 to 20 seconds
Add rice and the diced pork; stir briskly for 2 minutes
Season with salt and soy sauce; mix well and serve

That is pretty close to what I do normally. I like the idea of putting some pork in though. I will have to try that. Thanks!

You can add some corn, tomato(if you like), scallion and some small pieces of pork/chicken and some tomato sauce to your fried rice recipe, it will make it thousand times better, it's called west fried rice. And it's better to fried the egg first(use it later) and stir fry all the ingridient first then add rice and finally add egg. It makes it not that sticky and smells million times better :-)

Those sound like good suggestions. I will probably try adding in some pork. I'm not a big fan of tomato, but some corn could be good. Thanks for your response.

my favorite fried rice recipes are Basic Fried Rice, Pork Fried Rice, fried rice recipes with shrimp or chicken and Yangchow Fried Rice. Also, an easy fried rice recipe using canned tuna.
Basic Fried Rice recipe:
Ingredients
2 green onions, finely chopped
2 large eggs
1 teaspoon salt
Pepper to taste
3 tablespoons oil for stir-frying, or as needed
4 cups previously cooked rice, at least 1 day old
1 – 2 tablespoons light soy sauce or oyster sauce as desired
The most important tip in making fried rice is to use rice that has been previously cooked. Using previously cooked rice helps keep the dish from turning out wet or mushy. While you can use rice that has been cooked the night before, 2 or 3-day old rice is even better.
Gently rub the rice between your finger to break up any clumps (this will help the rice cook more evenly).
In a small bowl, lightly beat the eggs with a fork or chopsticks until they are frothy.
Heat a frying pan or wok on medium-high heat and add 2 tablespoons oil, swirling so that the bottom of the pan is coated. When the oil is hot, reduce the heat to medium and add the eggs.
Cook the eggs, stirring, until they are lightly scrambled but not too dry. Remove the eggs and clean out the pan.
Add 1 tablespoon oil, swirling so that the bottom of the pan is coated. Add the rice. Stir-fry for 2 - 3 minutes, until the rice is heated through.
Stir in the soy sauce or oyster sauce as desired.
Note: Traditionally, the Chinese do not add soy sauce to rice. If you like, you can serve the dish plain, without the soy or oyster sauce. Another option is to add a small amount (1/2 - 1 teaspoon) of XO sauce or thick soy sauce, or to use 2 - 3 teaspoons of dark soy sauce - these will give the rice a darker color.
When the rice is heated through, add the scrambled egg back into the pan. Add the green onion. Stir-fry to heat everything through.
Basic Fried Rice makes a nice alternative to plain steamed rice as a side dish. pairthe fried rice with a Basic Beef Stir-fry.
