My grandmother saved her pickled beet juice and put boiled eggs in it and set it in the fridge for a few days. I have also saved dill pickle juice and put eggs in it and set in the fridge to make pickled eggs. It makes just enough for us. Next time I will save the juice from bread and butter pickles to try.

hi shymurl, my dear freind, my family love eggs so i always find some new different innovative ideas, to serve them. this is a very simple way that i do to pickle my eggs. all you need to have is :-
at 16 hard boiled eggs
1.1 l of vinegar
15 gms of ginger
15 black pepper
15 gms all spice
while you have kept the eggs to boil you can make the liquid. the pickling liquid, fine. place all the ingredients into a medium sized saucepan , stir them together and heat to boiling. once the liquid reach to boiling point , reduce the heat and let the liquid simmer for ten minutes . remove from the heat and leave to cool to room temperature. meanwhile, place the peeled hard boiled eggs into a very clean large jar.
once the pickling liquid has cooled pour it over the eggs in the jar and seal the jar tightly with the lid . store the jar in a cool and a dark cupboard for atleast a month . the eggs will be ready to eat after this time.

I have never made these but my mother has I think. They are pretty good. I am not that big of a fan though. I am not sure how much I would actually eat these. They are good but not my absolute favorites. I think I like other sorts of things better than pickled eggs.
