I use to make them with my mom around the holidays. Its not that they are hard to make, they are very time consuming. They take quite a long time if you are making everything from scratch, but they are well worth it. We use to make potato ones and also sour kraut ones.

I usually buy the boxes or bags from the store. Actually Sam's Club sells a large bag for a nice price that will get my family 2 dinners. I also haven't had them in a very long time. I like to serve them with butter and onions.
I've never made them before, but I have eaten homemade ones.
When my husband was a kid there was this church that did a bake sale around the holidays, and they'd sell homemade pierogies. His parents would stop and pick some up to bring to their Thanksgiving dinner, which was always at his uncles house.
Well one of the Thanksgivings that we had dinner at his sister's, his parents brought some of those pierogies. There were potato ones and saurkraut ones. I tried both, but I'm not fond of saurkraut, so mostly stuck with the potato.
I doubt they'd be difficult to make, the hardest part would be rolling out the dough. I've made homemade ravioli before, so I guess it wouldn't be much different.
