One Of My Favorite Recipes!

Ok. I LOVE to cook! And one of my favorite recipes is this pineapple pork tenderloin that you put in the crock pot. There's something about the smell that makes me think back to when I was growing up. I grew up in Massachusetts and had grandparents who were very traditional as far as being New Englanders. You know those smells that permeate the house when you're doing your Thanksgiving and Christmas cooking? Lot's of cinnamon/nutmeg/ginger/allspice type smells. For me, there's just something about it. So I thought I'd share this recipe for anyone who'd like to try it! :-)
1/2 cup flour
3 tbsp butter
2 medium onions, sliced
1 can pineapple - I've used crused, cubed and sliced and it makes it delicious no matter which you use!
1-2 green or red peppers - I've found that red peppers have more flavor for this recipe
1 tbsp vinegar
1 tbsp soy sauce
1-2 tsp sugar (optional)
1/2 tsp cinnamon
1/2 tsp allspice
1/2 tsp giner
1 tsp garlic powder - I like to use a couple cloves of fresh garlic instead
Slice the pork loin into 1 1/2 - 2 inch pieces. Dredge in flour (seasoned with salt and pepper). Brown the pork.
In the crock pot, combine all ingredients, including the browned pork. Set on low and cook for 7-8 hours. While it's cooking, enjoy the smells that engulf your home! And remember, whenever you're using a crock pot, don't take the lid off unless necessary because a great deal of heat escapes every time you take the lid off.

That sounds delicious. I love crock pot cooking and I will have to try out your recipe. I love the aroma of food cooking in a slow cooker. Also the flavor and tenderness of the meat is the best.
