I am defrosting a chicken cutlet for dinner tonight. Does anyone have any ideas what I can make with it. I am board of the same old recipes. If you have some neat idea let me know. I am in the mood for something different.

I don't know what you normally do with chicken, but it is a very versatile meat, you could cook some peppers and onions and throw into a fajita sauce and wrap the whole lot in flour tortillas, or do a stir-fry with noodles, or marinade the chicken in a barbecue sauce and grill it.

I do make fajitas with it. I like the idea of making a stir-fry with noodles. I ended up making a stir-fry with rice last night it turned out pretty good.

Well what I ended up doing is I fried up some fresh onions in butter. I then added a few chicken bullion cubes and a little bit of hot water. I let that cook awhile then I threw in the chicken cut up in cubes and seasoned with garlic, paprika and pepper. I made the white rice separate in another pan. After I cooked the chicken I threw in some frozen peas and carrots and cooked until done. Turned out pretty good and I used teriyaki sauce at the table.

Hi moneymommy. You can do many things with chicken. What I suggest you to do that is easy, fast and tasty is stew chicken with potatoes and carrots. Fry chopped onion and garlic in the oil. Put the chicken and let it fry a little, add pepper (the kind you like), salt and a pinch of oregano and mix all. Add tomatoes sauce or pure of tomatoes and water (a quantity of water that will cook the potatoes and carrots). When it is boiling add chopped potatoes (chopped in four parts)and chopped carrots and let it cook all together untill the potatoes and carrots are cooked. Eat with white rice and salad or bread and salad. Hope it help you.

That is very similar to what I ended up making last night. I like the sound of your recipe and I will have to try it sometime. I didn't use potatoes or tomatoes so next time I will do so.

I like lemon chicken with rice and veggies. I chop the chicken into bite sized pieces, throw some lemon pepper spices in with it, and brown it while I cook some rice (brown rice, white rice, doesn't matter) .. once the chicken is browned, I turn down the heat and add some lemon juice for the chicken to soak in, and throw some veggies in with it (broccoli, cauliflower, and green beans are my fav) and put a cover on the pan so they get steamed with the lemon flavor. Once the rice is done, I throw that in the pan, too, for a few minutes and everything ends up with a nice lemony flavor that's not too strong, but it's a little bit different!
