i just noticed that my oatmeal is going to expire next month. Its still half the container and I dont think we'll be able to finish it all by then. I decided to grind it, add a pinch of ground pepper and garlic powder. Then took some chicken tenders and coated it a little flour, dipped it in eggwhites, rolled it on ground oats and baked it....im trying it now with some gravy and i never expected something this healthy could taste good.
in the future, im planning to try using oats as a breadcrumb substitute. I think it will be good on salmon and veggie tempura too.
how about you? have u tried using your regular quaker oats for such kind of purpose?

Oddly enough, I have tried something similar to this, because my husband is alergic to wheat! I use quaker Oats in meatloaf, too in substitution for the breadcrumbs, and they work very well, and add extra fiber! I like your chicken idea, though, and will give it a try!

Thanks! I will try it with meatloaf too, that is a very good idea. Thanks for sharing. It sounds yummy and healthier ( especially if you will susbtitute ground white meat instead of ground beef)! have a great day!
