does anyone have any good recipes to use with a deep fryer?

I haven't seen them lately but I used to buy these battered yams that were about the size of hushpuppies. They were so delicious! Of course, so are hushpuppies. Great, now I'm hungry. Now, I've never had them, but I saw on TV that some restaurants actually batter and fry squash blossoms? And what about fried eggplant. Yum.

Hubby makes ollie bollen every year at Christmas/New Years. We use the deep fryer to make french fries too. The frozen ones come out nice and crisp when you use the deep fryer. We also make egg rolls using bean sprouts, chicken or shrimp. Sometimes we use fruit inside and they are great!
