Vegetarian Recipe Thread: Roasted Butterbean Loaf

This is a great recipe I just tried, so I thought I'd share it with you. Serves 4 Ingredients: 8oz (225g) tinned butter beans (you can use dried ones and cook them up if you wish) 2 large onions, sliced 6oz (175g) mushrooms, sliced how you like them best 4oz (100g) rice, cooked (I used basmati, but any rice will do) 1 egg, beaten 1 tablespoon dried mixed herbs 1 tablespoon fresh parsley, chopped Salt & pepper, to taste A little oil, for frying Method: Mash up the butter beans. Fry the sliced onions in a little oil until they're soft. Add the mushrooms to the onions and cook for a further 10 minutes. Tip the mushrooms and onions out into a bowl and add the butter beans, rice, egg, mixed herbs and parsley. Add salt and pepper to taste. Grease a 1lb loaf tin and spoon the mixture into it. Alternatively you could make individual loaves in a muffin tin. Bake at 190C/375F/Gas Mark 5 for 30 minutes until golden brown on the top. This is great hot, served with your favourite vegetables, or even baked beans! If you're into healthy eating, why not try it with a crisp green salad with sliced bell peppers to give a little extra colour! Refrigerate it and it makes a great picnic loaf too, ideal to take to a plate party or a beach picnic. I hope you enjoy this!

No I'm not vegetarian, but I don't buy or cook meat because it's expensive and not as flexible to use as vegetables. I just don't think that you NEED meat in a meal before it can be called a meal. I rarely eat meat just because of the cost/bother.
