leche flan is one of my favorite desserts. in other countries, it's called creme caramel. my mom taught me how to make it. this is her special recipe:
ingredients: 16 eggs, 2 cans condensed milk, 1 can water (the can of condensed milk), sugar
you will need foil and llanera(the pan where you will cook the flan)
this recipe will make 4 to 5 leche flans
procedure: separate the egg yolks from the whites. strain the egg whites to remove the lumps. combine the strained egg whites with the yolks. add in the condensed milk. add water.
caramelize sugar (6 tablespoons) in a llanera. be careful not to burn the sugar because it will turn out bitter. when the sugar has browned, remove from the fire and let cool for a few minutes. when cool, pour the egg and milk mixture in the llanera through a strainer. the purpose of the strainer is to have a smooth flan. cover the llanera with foil and steam for 15 minutes. you can also tell when it's cooked by sticking a toothpick in the flan. if it comes out clean, then it's done.
hope you like this recipe. enjoy cooking and eating! =)
