Sugar Free Chocolate Chip Cookies
1/2C.softenedmargarine
1 egg
1 t. vanilla
1/4 C. non-fat dry milk
1/2 C. sugar Twin
1/4 C. water
1 C. flour
1/2 t. baking soda
2 ounce dietetic choc candy - diced
Cream together margarine and Sugar Twin. Add egg, vanilla, non-fat dry milk and water. Beat 1 minute at medium speed. Fold in chocolate candy.
Drop from teaspoon onto ungreased cookie sheet. Bake at 350° F. for 20-25 minutes.
Serving Size : 48

Light Chocolate Peanut Butter Pie
4 T. peanut butter
1 T. honey
1 1/2 C. crispy rice cereal
1 package Sugar Free chocolate pudding
8 T. fat-free frozen whipped dessert topping, thawed
In a small bowl, combine peanut butter and honey, microwave on high 20 seconds. Stir in cereal. Press into a 9-inch pie plate; chill.
Make pudding with skim milk according to package directions. Spread over pie crust; chill. Top with whipped dessert topping.
Serves 8.
Right Side Up Pineapple cake
1 box yellow cake mix prepared as directed
1 can crushed pineapple undrained
1 cup brown sugar
1 package instant vanilla pudding(2 cups milk)
1 package cream cheese
2-3 bananas
1 container whipped topping thawed
Bake cake according to the package directions in a 9 x 13 inch pan in a small saucepan combine undrained pinapples and sugar over medium heat boil for 5 minutes reducing heat if necessar do not let sugar mixtur burn pour over top of baked cake and allow to cool prepare instant pudding per package instructions add softened cream cheese to prepared pudding and blen thourghly pour over top of cooled cake slice bananas and plce evenly on top of cake top with whipped topping covering bananas completely
Creole Gumbo
4 live hard shell crabs cleaned
1 pound boneless skinless chicken thigh cut into 1 inch pieces
1/2 pound andouille sausagecut into bite size pieces
1/2 pound of kielbasa cut into bite size pieces
1/2 pund veal stew meat
1/4 cup vegetable oil
1/4 cup all purpose flour
1 meduim onion chopped
6 chicken wings tips removed cut in half at joint
1/2 pound smoked ham diced
1 tbsp paprika
1/4 cup chopped flat leaf parsley
3 large garlice cloves minced
1 tsp ground thyme
1 tsp salt
1 pound medium shrimp peeled and deviened
24 shucked oysters (1/2 pint) with their liquid opitonal
1 tbsp file powder
5 cups hot water
in an 8 quart dutch overn combine crabs( if using crabmeat add in fourth step with shrimp and oysters) chicken thighs both sausages and veal cover and cook over medium heat for 30 minutes heat oil in meduim size skillet over medium heat add flour and cook stirring constantly until mixture turns to the color of pecans about 5 minutes reduce heat to low and add onion cook stirring contantly until onions softens about 3 minutes stir mixture into pot with crab mixture gradually add 3 quarts of water stirring to combine and scraping brown bits from bottom and sides of pots bring to boil stir in chicken wings ham paprika parsley garlic thyme and salt return to boil then reduce heat simmer about 1 hour stirring occasionally add shrimp and oysters if using simmer 10 minutes remove pot from haet and stir in file pwder let stand 5 minutes serve over rice makes 8-10 servings
Mexican Rice Dish
1lb ground beef
1 envelope of onion soup mix
1 envelope or taco seasoning
1 jar of mild salsa
1 large can of refried beans
2 cups water
2 cups minute rice
3-4 cups of shredded cheese
brown 1 lb ground beef in large skillet add to ground beef 1 pkg of onion soup mix and 1 pkg of taco seasoning as the ground beef is cooking prepare the refried beans spoons the beans into the bottom of your casserole dish add to the beans 1 cup of salsa the salsa will thin out the beans plus add that extra zip spread the beans over the bottom of the dish prepare 2 cups of minute rice in microwave( 2 cups of water for 2 cups of rice cook for 5 minutes) when rice is finish add it to the ground beef mixture and stir in the remaining salsa let it simmer to fully blend the flavors over the beans add a layer of shredded cheese over the cheese begin spooning your rice and beef mixture spreading evenly until the dish is nearly full last add another layer of cheese place in oven at 350 degrees for about 20-30 minutes
