Because the Christians liked to borrow from Pagan Holiday's. In this case it was with the Spring Equinox, called Ostara, which is usually celebrated around March 21st. With the return of spring, came the birthing of the farm animals for the year. Which is why we see bunnies, chicks, eggs and little lambs as symbols for this holiday.
Part of the Ostara mythology involved the return of various deities from the underworld (symbolic of the end of winter). So it's not surprising that this holiday got enmeshed with the Christian story of the ressurection of Christ. So that is one reason we have the Easter Bunny and the Eggs. There are other explainations but most deal with different Pagan beliefs from different areas of the world.

Yes, so many holiday celebrations are a mish=mash of religious traditions, ideas from different countries, pagan rituals, etc.
I guess if the Easter bunny didn't carry eggs he'd have nothing to do, and he'd rather carry colored eggs than be unemployed, LOL.
