Does anyone know something about health benefits of Oyster Mushrooms?

We've grown Shiitake mushrooms because of their health benefits. But now I'm getting questions about the benefits of Oyster mushrooms. Has anyone heard of health benefits related to Oyster mushrooms? Would you know of any reliable research on this topic? Amazing that I can grow those mushrooms for 10 years and still be surprised by what I don't know.

I love mushrooms. Over here, the mushrooms are quite expensive. Once I was holidaying in China with my family. The local driver that we hired took an off the beaten track to show us a family-owned restaurant. They served only mushrooms. I didn't know that there are so many different kind of mushrooms. All 16 dishes of mushrooms and we didn't even taste half of the varieties. I hope the place is still around. It's in Sichuan, hopefully that family is not affected by the devastating earthquake.

Oyster Mushrooms are low in carbs, sodium, and are cholesterol and fat free. They are high in riboflavin and contain as much fibre as a medium tomato. They are a good source of niacin, pantothenate and copper.
