Do you always say "bye bye" to the person you are talking to on messenger?

that depends.
if the conversation becomes stagnant, then i'd leave it as that.
but if we're talking and i want to leave, it's only polite to say my goodbyes or goodnights.

Yeah, I always say "bye" to the person I am talking to on the messengers. I think it's just a good manner or habit to tell others that I'm going off, otherwise the other person may think I'm still online or wonder why I do not reply. Even for face to face conversation, it's a good habit to say "bye" when we are leaving or ending the conversation.

it depends on who im talking to, if i know and like the person i'll say "bye, talk to you later, back in a bit, peace" and so on. if the person is annoying, i just ket them keep typing until they stop, thats my goodbye to them, when i don't reply.
