Mini muffin help!

Hi I bought a mini muffin pan and am looking for recipes for good foods made into muffins! I already did mini veggie meatballs! I am not looking for muffin recipes! But for recipes that I can put in muffin pans and freeze for quick snaks for my kids! I must ask that you omit any red meat or shelfish as we dont eat either! Please help!

why not brush it with oil and put wanton wrappers on it. bake it till crunchy then put fruits, a little cheese, a little cinnamon powder or a little sugar then heta it again. it can be like fruit tarts or miniature fruit pizza. i also have mini muffin pans and i also sometimes put wanton wrappers and then put mallows and chocolate. then taste like smores. lol. you can try it with any fruit.

now that sounds yummy not just for the kids but for me. MMMM chocolate great for me but not the kids! Thanks for the wanton idea though!

You can make quick breads (pumpkin, banana, etc) and put them in muffin pans. That would be a good snack for the kids. You could probably freeze popsicles in them as well. How about cutting pie shells to fit, then fill with fruit filling and seal the pie shell over it. Mini fruit pies! You could probably do something similar, only put pizza sauce and cheese in it. Mini pizzas! Just use your imagination and I'm sure you will come up with something creative that the kids will like. Best wishes!

Hi popsicles would not freeze in these pans they are to small. Fruit pies sound great! Mini pizza pies sound cool to! Thanx for your responce.

I have made little ham and cheese puffs in my mini muffin pans. You just take a buscuit crust~ cut a refrigerator biscuit in 4's and use 1/4 for each muffin. Then take egg, ham and cheese. Mix it up and bake. They taste really good and my kids love them.
I also make mini muffins in mine which my kids love for snacks too. I make banana bread and bake it in the muffin tins rather than in a bread pan.

Hi as I stated before, WE DO NOT EAT MEAT! so this recipe would not help me at all! I do make alot of mini muffins for them.

As I stated earlier you did not in your original comment state that you do not eat meat. You just said red meat and shell fish. Maybe you need to rewrite your request.

Hi,
you should try to make rice balls, with leftover rice. Also potato balls very delicious with any stuffing fruit, cheese, or vegies. A slice of bread filled with peanut butter is also a great pick up for kids. Try it, let me know what your children think.....
