Frreezing the stock should not make it taste worse

We had chicken soup yesterday from the stock and the cooked chicken I froze from what was left over from the stock I made over two weeks ago. Then my husband comes up with the brilliant idea, that you do not freeze chicken stock, that you have to finish off the chicken and the stock in the couple or three days it takes after you made it. Now I am smart enough to know that single or double quantities of anything are more expensive then getting the club pack, and besides it was his idea that we should buy a small frying chicken and make soup from that rather then buy a package of chicken pieces. Yet when we buy thighs, I also freeze them uncooked, four thighs to a package because he will eat three, and I will eat four. So what is the problem? Can one freeze chicken stock and cooked chicken and for how long? I use the chicken stock for other things, and I do not exactly like homemade noodle soup as he does, and I wanted to use some to make some minestrone.

I am not sure about cooked chicken... a month would be the longest I would go freezing it... I always freeze my chicken uncooked. As for stock I use ice cube trays and then freeze them and I have the right portion of stock whenever I need it. As far as I know stock can last for a long long time. Thanks Zelo

I put mine in mason jars, but my husband has an idea that you have to use it within a month or two. But I would rather make my own rather then buy it.

I See know problem frezing it. to use later as long as ya have the right bowls to do it in. and dont wait all that long before use like say 6 months later.

No it should not have. I wonder if it is what I put in it, besides the usual carrot and celery leaves and onions. Anyway I have to make a stock without carrots and celery leaves because my daughter-in=law is allergic to those and if she comes over and we are having soup, I would not want her to die on me.

But it was only a month and we did not have to defrost our fridge. So there should not have been any problem.

we do freeze what is remaining in the chicken only after it is parially cooked and it tastes fine when we take it out after about 15 days.but we do stock fish also along with chicken and sometimes we get the smell of fish too from the stocked chicken.

i don't think w ever freeze stock. we do freeze uncooked chicken and it never goes bad no matter how long it is in the freeze. we never freeze cooked chicken though. maybe it's ok but we always opt to finish it as soon as we can, then we can buy something else to to cook.

I freeze my chicken soup stock, and beef too. I cook it just like you and then I put the stock into margerine containers, the real big ones, and use it again when I need to. I buy a whole chicken and I roast it. Then I take the meat off of what is left after we eat dinner from it. I use the meat for other meals and freeze it in freezer bags for another meal. Then the little pieces I use for a chicken salad for our lunch the next day. Then I take the bones and make stock out of it. I cook it for hours and hours and then after it cools off I take off the fat off of the top and freeze the stock. When I make the soup stock I use the drippings in the roaster as well. So I use every part of the chicken and I end up with one supper and leftover sandwiches the next day and another meal of meat for another day and soup stock for when I want to make soup. So a $10 chicken goes a far way for me. I have about 4 packages of stock right now in my freezer and since it is Sunday and cold and snowy outside I will put a pot on today. I think I will do that right now. I just add a bunch of vegetables to it and let is simmer for a couple hours. Alrighty then, talk to you later my friend, Have a good mylotting day, Chris

Just make sure when you freeze the stock it is only the stock and not vegetables too as they will go mushy when you cook it later. Also make sure you don't freeze it with any noodles as they go really mushy and you will end up with nothing but mush.

That does seem like a waste of good meat. I would do the same as you and just use chicken parts, in your case. I only do that if I am roasting a whole chicken first.

It was. I cannot eat a whole boiled chicken in two shots. I mean if we had company, we could do that, but just for the two of us? I should have bought some chicken parts yesterday, but we had a lot of chicken left and besides I had to buy a lot of other stuff. Ran out of =---

I think freezing the stock for long time can make it taste worse than before. Because freezing can damage the meat. And after we cook it , the taste is worse.

I am talking about the stock minus the chicken. Usually I freeze the stock and chicken separately. I will use the chicken, like the br*st part in sandwiches or make burritos.

I see no reason "Why" you should have a problem freezing chicken stock...I think it would be fine & proably be just as fresh when you take it out as it was going in...Men don't know that much about cooking, so if i were you i would depend on my own knowledge..haha

I have always frozen my chicken stock and it tastes just as good as fresh! In fact, I have a container in the fridge I use to pour bits and pieces and broth into so I can make stew when I have enough. Any little piece of meat, spoon of broth, piece of vegetables, go in there and once a month I have a free meal of stuff I would have thrown away. Your chicken stock will taste fine if you freeze it.

I figured it should be good after I freeze it. I mean maybe it is in my husband's head and he figures because when he was young, they only had an ice box (we did too( that it is only partially frozen. It tasted the same to me, but it did need a bit more salt.

Based on my experience (from observing what my mother does :P) freezing uncooked chicken is good for up to three weeks. We don't freeze uncooked food any longer than three weeks - and it should really be "freezing temperature". As for cooked meals, we'd only have it for a week then we either have to eat it or give it away before it spoils. It actually does spoil because of the moisture in the fridge, I think. Of course you can freeze it - at least I have frozen up to about three months. Ther was no difference in taste at all. I don't know why he is thinking that way at all. Tell him that Cynthiann says that you can do it:)

I have frozen stock before. I usually try to concentrate it by boiling it down a bit to save space. I have not noticed a taste change although I am sure it is possible it might change after a few weeks in the freezer. If you added a few new spices and vegetables I doubt you would notice a difference if the broth was good before you froze it. I usually use the stock for making stew, it makes a good tasty base for adding all the other ingredients to. You have to watch the salt though as it can get concentrated.

Maybe that is it. I did not boil it down enough. So I will do that. I am also very light on the salt because I cannot take that much salt, high blood pressure and all that, but my husband really likes it salty. (He should not - he has to watch his blood pressure as well.)

You can freeze the chicken stock and chicken as long as it has been fully cooked. I'm not sure of the time limit, but try to use it in a reasonable amount of time. When you buy frozen meat, poultry or otherwise, if it is frozen, you cannot thaw it and freeze it again if it is still uncooked or else bacteria will get in. However, you can thaw the meat, cook it and then freeze it. That's what I was always taught anyways. Hope this helps some.

It was just less than a month since I froze it. I cooked the chicken, made stock, and we had some that day, but I froze the rest. And when I took out the stock and the cooked chicken, my husband said it tasted funny. It did not to me. And we have a good freezer and i had done it before, but then I used it in minestrone and he did not notice any difference. But he wanted the soup his mother made with the noodles.

Stock is a wonderful invention. If you can really even call it that. Freeze it, use it in your rice, bread or even use it in place of the water when you have to make that emergency pack of ramen.

You can freeze anything as long as it is stone cold when it goes in the freezer chicken stock should last three months but no longer.Then it will start to lose its flavour ,also all your ingredients must be fresh before you start.I hope this helps I have frozen casseroles and stews load of time stock and all.xx
