What do you add to your adobo?...

Adobo can be considered as one of the most popular dish in the Philippines... and almost all regions have their own way of cooking this meal... but the main ingredients are always present... garlic, onion, soy sauce, vineger, pepper, chicken or pork... Some would usually add something to their adobo... it may sound weird for others... but adobo is a dish where a veteran or average cook can play with the taste... In my case... i always add button mushroom to my adobo... i learned this from a former co-teacher who loves to eat mushrooms... I know of some who add black olives to perk up the taste... and one who adds "achuete"... to have that certain reddish color... So... what do you add to your adobo?... did you learn this from someone else... or did you experiement and found out that it was good?...

before i put soy sauce i rub the chicken with sugar. then i put the usual soy sauce and garlic and onions. i put the vinegar later on when the chicken is tender already. i also put fried tofu for sometimes i just eat the tofu and not the adobo itself for sometimes i get carried away and eat a lot of rice lol. so thatwhat i put on my adobo. sugar and tofu.

the sugar when caramelized makes the adobo taste even better. and you dont need to put a lot of soy sauce the sugar helps it to get darker. i also use knorr seasoning instead of the regular soy sauce for more yummy taste. i eat this with cucumber and it does really taste good. i read someone puts hard boiled egg that sounds yummy too. i will try that. this is a good discussion my dear

I like the idea of tofu... because this is one of my favorite food to eat... adobod with tofu and mushroom... sounds very yummy... does the sugar make the adobo taste a little sweet... or does it have a different purpose?... Thanks for the response...

Mmmmm. Food! I would add the black olives for sure! We have adobo a lot. It is one of our favorite comfort foods and as you say never has to be the same.

Wow... where did you learn how to cook adobo?... and i totally agree that this is a comfort food for most people... i cook this everytime i want to eat something really tasty and if i want to eat a lot of rice... nice to know a none Filipino who knows how to cook this dish... Oh i see... i think that is because Adobo was brought to my country by the Spain through Mexico... there are actually a lot of Filipino dishes that were brought to my country this way...

Adobo is common in Latin American cooking, too, although not exactly the same. For instance chicken mole is not altogether unlike adobo chicken. I learned about Philippine Adobo from a myLot friend, actually, but the ingredients in it are pretty much the same as I've always used just because they are our favorite ingredients. We use bay leaves in ours, too, and conveniently there is a bay laurel tree in our neighborhood, so we don't have to buy those in the market. :-)

[i]Hi aseretdd, My Mom is the cook of the family and the ingredients you mentioned are what she is using until this very moment...I have tried to make mine but I don't like the taste maybe because pork or chicken here are not as fresh as what we got. I talked to a new friend and she said, they will add eggs in their adobo....sounds new to me but so far, i didn't try it![/i]

Adding eggs is also new to me... so i have yet to try it... but seems like a lot of Filipinos have been doing this for a long time... adobo in the US is totally different... because the soy sauce and vinegar there taste different from what we have here... Thanks for the response...

I agree that is why I don't like to eat a lot of adobo here because of that, I miss our vinegar and soy sauce!

Hi aseretdd! I don't put onion on my adobo. Some times, I put sugar on it to make it a little sweet. my husband and brothers like adobo that way. I also put potato or hard boiled egg. take care

I just cooked adobo... and for the first time i added pineapple chunks... and i really love the taste... good thing i started this discussion... because i really learned a lot... next time i will be adding hard boiled eggs... Thanks for the response...

I add a little sugar and fried potatoes. This somehow balances the taste of the vinegar and the soy sauce. Not too sour and not too salty. Fried potatoes, to have veggies on it as others prefferred to eat just a piece of pork or chicken and a piece of the potato.

I have never tried adding sugar to balance the taste of my adobo... i think i would have to try that one of these days... i guess a lot of us has our own unique way in cooking this dish... and others are indeed very interesting... Thanks for the response...

Hi aseretdd, good day to you. Well adobo was realy one of the best food here in our country. In every party event you will always see that food because it is very delicious to the taste of people. Well, when my father is cooking this kind of food he always told me that the soy sauce was the most important when cooking it and the next is the meet or chicken. My father have a great ability to cook because he was a [b] KAPANGPANGAN [/b. And as we know most of kapangpangan are good in cooking. Well, i guess when cooking adobo it will be great that you will put a mashroom to increase it's good taste than other adobo. Now i really have a great idea because of you said to this discussion. . . Hmp! I really want to taste that kind of adobo which there is a mushroom. As i remember, my mother told me that if i want to increase the amount of ADOBO That i will cook, i add potato,cassava because it is good to increase the amount and last it also give a good taste. . . When i eat in our school canteen, i always order that kind of food, because in our canteen adobo is very affordable and the one who cook that food is great because he is KAPANGPANGAN. . . My classmate also told me that kind of food is one of his favorite and he always as ask to her mother that in his birth day, always cook adobo because he really want it. Adobo is indeed very popular in the whole of the Philippines... parties and fiestas are never without it... but the best one i have tasted was not cooked by a Kapampangan... but by a Visayan... Thanks for the response... forgetting to tag is okay... don't worry about it...

Hi aseretdd, we are from different countries and definitely we have different popular dish in our country respectively. This is the first time I come across the popular dish, adobo in your place. From the ingredients using, like chicken or pork and the other ingredients you mentioned above, the dish seems like yummy enough. I believe the dish tastes rather spicy and sour as well. I love dish with such taste. Hopefully I would have chance to taste such delicious dish in time to come. Happy posting!

Yes, this dish is very delicious and very easy to make... you should try it one time... and you can always adjust the taste or flavor... and it will still be considered adobo... as long as the key ingredients are there... Thanks for the response...

I love adobo so much that I want to have it in my meal everyday. I know how to cook chicken and pork adobo. Sometimes I cook pork liver and pork meat adobo and I put some sesame oil so it will smell better. I love it with lots of garlic and some chillies. I have cooked adobe with fried potatoes. What I do is I cut the potatoes in wedge and I fry it until golden brown. I mix it with adobo when the adobo is nearly cooked. Sometimes I also put baguio beans in it when I have no time to cook vegetables. I just put it in adobo and bam! I have my adobo and vegetables. Yum yum...

You have your own unique way of cooking adobo... nobody ever mentioned sesame oil or vegetables other than potatoes and carrots... i bet the baguio beans taste delicious when added to adobo... Thanks for the response...

My eldest son (16 years old), whose in charge of the kitchen, sometimes add sugar to his adobo, especially when he thinks he puts too much vinegar (lol). Adobo is indeed a very versatile dish, as in you can almost add anything to it. My wife used to cook for us an adobo-like dish, although she would add clear soda (sprite or seven-up), and my kids would always love it.

I remember that chicken wings that my room mate would always bring home to the apartment... it tastes quite delicious because her mother boiled it using sprite... but i can get the taste when i cook it myself... and i agree with you that adobo is quite a versatile dish... that is why a lot of filipinos and non filipinos love it... I add rosemary herbs, taragon and pineapple juice to have an excellent taste. I love adobo especially chicken adobo and I always make it a point to have a wonderful adobo recipe every time my friends coming to our house.

before when i used to cook it is just the usual ingredients for an adobo that i put in. however, i do another version. i brown the pork after having it boiled in the adobo concotion for about 30+ minutes. some versions of adobo is straight boiling. i know some put pineapple chunks and even a little pineapple juice in adobo. i've already had a taste of this courtesy of an aunt and it's good. even better than the typical adobo cooked to perfection.

I tasted that kind... and it is very interesting... adobo with a different kind of twist... i also tried adding pineapple chunks... and my daughter just love it... so now... my adobo is never without pineapples... and i learned that here in mylot... Thanks fore the response...

my parent add potato and/or hard boiled eggs when cooking adobo!! we love eating eggs with adobo sauce in it.. and if i dont like to eat rice, i get the potatoes and mash in my bowl and it become my rice.. eating adobo is best when you keep it for few days before eating..

I also add potatoes and sometimes carrots to my adobo... mainly because those are what my daugther like... but i haven't tried hard boiled eggs... i think i will add that next time i cood this dish for dinner... Thnanks for the response...

yeah at home MIL (mother-in-law) loves to cook and sometimes she experiments food and hubby loves adobo too, we like it with hard boiled egg or quail eggs (my son loves egg "naman" hehe), yes MIL adds potato, mushroom and sometimes young corn/baby corn have you tried it? it's fine with me hehe... love the adobo style that is dry and with lil sticky sauce yummy hehe thanks!:) happy myLotting! If we're short of money to buy meat products like pork and chicken, we make "adobong sitaw" just for us to eat. :D Its nutritious too although no meats included in the dish.

I am only able to eat adobong sitaw when my husband is home... because i don't know how to cook that dish... very tasty... but i still prefer chicken or pork adobo... but with sitaw is also okay... Thanks for the response...

Well, one time I tried adding chili and barbecue powder to it with a touch of grounded thyme leaves and it was great! My wife loved my variation of adobo and so I wrote the ingredients on a piece of paper. I believe adobo is a very interesting and challenging dish to cook. It depends on the cook's taste buds to be able to produce a great tasting adobo dish.

Wow... barbeque powder... that would certainly put a distinct taste to the adobo... never tried that one before... i wonder if i will ever like it... since i don't really eat spicy food... and i agree... adobo is a challenging dish to cook... not as easy as it looks... Thanks for the response...

We don't experiment on our adobo :) We like it in its original form, no nonsense. But we do put hard boiled eggs with our adobo, but I don't think it's really an additional because I think it's more of a tradition and people who don't put hard boiled eggs aren't really doing it right :P Also, we prefer mixed adobo over chicken adobo or plain pork adobo. I grew up without a hard boiled eggs added to my adobo... i guess it depends on the province where one lives... i have been to many fiestas in my province... but i have never encountered this adobo with quail eggs or hard boiled eggs... Thanks for the response...

Whoah... this made me crave for an adobo, I just wish I could be there to taste your adobo... :) I just cook the simplest adobo, but others put pineapple in it, and maybe when I will cook adobo I will try to put some pineapple coz I love pineapples.

hi! i love eating adobo! we usually mix chicken and pork and a week is not complete without having adobo! its the family's favorite, i should say. we usually add eggs on our adobos. and potatoes also but mostly its the eggs as an additives. happy mylotting aseretdd!

Timely question because my lunch was adobo. My adobo is pork meat and pork liver. I love liver so much. If my mom cooks chicken adobo, we also put hard boiled egg. And I love eating my adobo with papaya achara.
