I have a couple of ideas for you. You can either throw it in a pan with some olive oil but first cut up in to small pieces. You an also bake the chicken then cut it up into small pieces it is your choice. Then cut up some garlic and if you don't have that throw in some garlic powder and pepper and salt while cooking the chicken is sizzling in the pan. Add some vegetables and maybe just cook up some pasta and throw it on top and you have a great pasta chicken dinner. I did this last night with chicken, mushrooms, garlic and peppers as they were all left over and everyone ate it and seemed to like it.

Well you probably made something by now but when I dont know what to do with chicken, I often make chickenburgers. just tear up the cooked chicken and add cream of mushroom soup or cream of chicken and put onto hamburger buns...yummmy!!

curry chicken,
or how about chicken a la king
here you cook your chicken, cut it up into very small pieces, make mashed potatoes, and add the chicken to the mash potatoes, and pour ala king sauce on it,
if you don't have the sauce package, milk, salt, pepper to taste, a tablespoon of powder let it all thicken and pour it over your meal,
you can add other spices if you are a spicy eater, cilantro gives it a nice flavor use what ever you like

One of the nice things about chicken is that the meal possibilities are just about endless. Depending on the cut of the chicken you can do a lot of things with it. Even just letting it sit in a marinade for awhile can totally change the meal.
CITRUS CHICKEN MARINADE
1/2 cup orange juice (juice of 1 orange)
1/2 cup lemon juice (juice of 2 lemons)
1/4 tsp rubbed sage or several leaves fresh, chopped
1 1/2 inch section fresh ginger, peeled, minced
1 tablespoon soy sauce
3 cloves garlic, minced
a few drops Tabasco or 1/4 tsp hot salt
Combine ingredients (a blender makes a good emulsion and eliminates the need to mince or chop).
Marinate cut chicken pieces in a Ziploc bag for several hours or overnight. Broil or grill until chicken until done using your preferred cooking method.
LEMON PEPPER CHICKEN MARINADE
1 bottle Italian dressing
1 bottle honey dijon dressing
1 bottle balsamic vinaigrette
1-2 tsp. lemon pepper
Combine all ingredients and mix thoroughly.
Marinate 1-2lbs of chicken (overnight for best results) and grill.
STIR FRY CHICKEN MARINADE
1 cup vegetable oil
3 whole cloves garlic, minced
1 tablespoon freshly grated ginger
1/3 cup soy sauce
1 tablespoon Mrs. Dash seasoning
Combine ingredients, using Mrs. Dash seasoning to taste. Prepare mixture one day in advance to ensure best flavor. Used to marinate chicken at least one hour before cooking.

I cooked some last night and all I did was pan fry in butter and olive oil, I put salt and pepper on it and let it get good and brown then I served is with a choice of sauces. Tomato, salsa, and mushroom so that each go to choose. I also had fresh asparagus and baked potato to round it off.

in india we make many varieties with chicken ,curries , fried items or snacks or for bread toast or for chicken biryani(spiced rice with chicken).
i will tell u one simple recipe called chicken 65 which is famous in india.
u can take chicken leg pieces for this recipe or take small chicken pieces . first u boil that chicken pieces with turmeric 1/2 spoon and buttermilk 1 cup .
take salt 1 spoon,chilli powder 1 spoon or take chilli sauce 1,2 spoons ,cornflour 3,4 spoons ,ginger garlic paste 2 spoons, indian masala 1 spoon or add pepper powder, soya sauce 2 spoons, red food colour 2 pinches,veneger or lime juice 2,3 spoons,and combine all of them in a plate and add chicken pieces to that mixture .remove buttermilk (if excess is there after boiling),and add only chicken pieces or leg pieces. marinate this pieces for 1/2 an hour to one hour or keep in refrigerator for one hour and remove from refrigerator and fry this chicken pieces in hot oil. after u deep fry this pieces in hot oil ,remove and serve hot with tamoto sauce or eat it plain.

Just fried chicken is good, you just need to make the sauce so special though, hehe.
