What to do with corned beef

Help! I ran into a sale that I couldn't pass up. Now I have several corned beefs, and I'm looking for something creative to do with them. We've done the boiled dinner and reuben/rachel sandwiches already. Does anyone have any interesting ideas?

Hi hon Cat! Lol! I'm not really creative with food so i don't know if my suggestions would be of any value to to you. Why don't you make spaghetti but instead of using ground beef, replace it with corned beef. It would be better if your corned beef is/are the long strands type. How about corned beef spread (...with mayonnaise)? How about corned beef and beans (...like pork and beans)? Hmm, the usual sauteed corned beef. You know, garlic, onions and tomatoes then corned beef. You can FedEx me the rest. Lol!

You sound pretty creative to me! Using it in spaghetti sauce is an excellent idea. Corned beef is salty like pepperoni is, right? Hmmmmm...I bet it would be good on pizza too. You game me great ideas! Not sure about the beans, garlic and onion though...I'd probably add to the global warming problem...lol. On the food tv channel, I've been seeing chocolate covered bacon. Why not chocolate covered corned beef? We'll call it CCCB for short. If it comes out good, watch for the FedEx truck, ok?

I like to eat corn beefs too. But the corn beefs we have here are mostly from china and it has more starch then beef in it. When I can get the good brands I like to fry it with cabage. They taste good. Eggs mixed with corn beef is delicious with lots of big onion added. I fry it like pancake. It goes well with rice.

yummy thanks for starting this discussion. i've been here several times trying to find one to respond to and dont know how i missed this one. i really love corned beef and am glad to read other ways to have it. i've tried your ways already. looks like you got some yummy responses.

I love corned beef and here in Germany it is becoming difficult to find.
When I lived in the UK I used to ask my butcher to cut me slices, almost one inch(2 cm) thick. I would coat it in batter, fry it in deep fat or oil until it turned brown then eat it with chips(French fries) and mashed swede turnip or baked beans.
Corned beef fritters! Does the queen live so good? How often are they on the menu in the white house? They don't know what they are missing!
Maybe this idea is not so creative as you were looking for but they are really good.
I am so hungry just thinking about them?

That does sound good! Anything fried is good with the family...lol. Before St patty's Day it was $4/Lb here. Now it's about $1/Lb...who could pass that up?
I would assume that the slices are precooked? Please let me know, as this certainly sounds like something I'd try. I like the fritter idea too. I've had fritters with crumbled bacon, so why not corned beef? Good way to use up whatever is left over.
Have you ever tried corning your own beef? It's actually pretty easy and you can do more than one at a time. Here's a link (information only) to a recipe that I've tried, and it's pretty good. Especially if you're having trouble finding it there.

Yes, the corned beef from the butcher was just like you would buy in a tin.
Only needed warming up and was fine when the batter was ready,

The shops here are offering German produced stuff which is not so good as the South
American kind.
One dollar a pound is an unbelievable offer. I would have stocked up as well.
